Pignolata (Sicilian Honey-Glazed Pastry Clusters)
Why this recipe works
- Crisp, sticky contrast: Small fried dough pieces give the clusters bite, while the warm honey coating sets into a glossy, lightly tacky glaze.
- Sweetness with lift: Lemon zest and juice cut through the honey, keeping the glaze bright rather than heavy.
- Classic fried pastry method: Frying the dough in small nuggets helps it cook evenly and creates the recognisable clustered shape once glazed.

Timing notes
- Rest the dough briefly: The short rest relaxes the dough, making it easier to pinch and roll into even pieces.
- Let the glaze settle: A few minutes after shaping allows the honey to thicken slightly so the clusters hold together better.
- Best at room temperature: Serve once the honey has set but before the pastry loses too much of its freshly fried texture.
Common mistakes
- Letting the oil drift: Keep the oil close to 170°C (340°F); hotter oil can brown the outside too quickly, while cooler oil can make the pastry heavy.
- Frying too many at once: Work in batches so the oil temperature recovers quickly and the dough pieces colour evenly.
- Overheating the honey: Warm the honey only until fluid and steaming; boiling it can dull the flavour and darken the glaze.
Ingredient notes
- Choose a mild honey: A clear, floral honey lets the lemon and pistachios come through without overpowering the pastry.
- Use unwaxed lemon: Because the zest goes into the dough, an unwaxed lemon gives a cleaner citrus flavour.
- Keep the nuts fresh: Fresh, bright pistachios add the best crunch and colour; stale nuts can taste flat against the honey.
Make-ahead tips
- Make ahead for serving: Pignolata can be made earlier in the day and kept covered at cool room temperature until needed.
- Best on the day: The pastry is at its lightest the same day it is fried, before the honey softens the exterior too much.
- Good for sharing: Once the honey has set, the clusters can be moved to a serving plate or container without much fuss.

Ingredients
Instructions
- Roughly chop the pistachios and set aside. Finely zest the lemon, then squeeze out 1 tbsp lemon juice.
- In a mixing bowl, whisk together the plain flour and fine sea salt. Rub in the unsalted butter with your fingertips until the mixture looks like fine crumbs.
- Add the eggs, vanilla extract, lemon zest and the lemon juice, then mix to a firm dough. Knead briefly until smooth, then cover and rest for 10 minutes so it relaxes.
- Heat the sunflower oil in a large pot to 170°C (340°F). While it heats, pinch off small pieces of dough and roll into little nuggets about the size of a hazelnut.
- Fry the dough pieces in batches for 3 to 4 minutes, stirring gently, until evenly golden. Lift out with tongs and drain well; let the oil return to temperature between batches.
- Warm the honey in a saucepan over low heat just until fluid and steaming, not boiling. Tip in the fried dough and toss for 1 to 2 minutes until every piece is glossy and coated.
- Pile the glazed pieces into small clusters on a serving plate and immediately sprinkle over the pistachios. Leave for 8 minutes so the honey sets slightly, then serve.
Recipe notes
Tips
- Keep the oil steady around 170°C (340°F): too hot and the outside browns before the centres cook, too cool and the dough absorbs oil.
- Toss the fried pieces in warm honey off the heat if it starts to bubble, so the glaze stays clear and doesn’t taste burnt.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised eggs and honey.
Substitutions
- Replace the pistachios with almonds for a similar crunch and a milder nut flavour.
- Replace the sunflower oil with vegetable oil for frying.
- Replace the vanilla extract with vanilla sugar for a softer vanilla note.
Storage
- Refrigerate up to 3 days
- Store in an airtight container at cool room temperature for up to 2 days, or in the fridge for up to 3 days. Bring back to room temperature before serving; the honey will firm up when chilled.
