Leek and Potato Vichyssoise
Why this recipe works
- Silky texture: Yukon Gold potatoes blend smoothly with cream, giving the soup body without making it heavy.
- Gentle allium flavour: Cooking the leeks and onion slowly keeps their flavour sweet and delicate rather than browned or sharp.
- Built for chilling: The soup is designed to be served cold, so it can be prepared in advance and finished with chives just before serving.

Timing notes
- Chill until properly cold: The soup needs enough time in the fridge to develop its clean, refreshing character; lukewarm vichyssoise will taste flatter and heavier.
- Serve soon after finishing: Add the chives just before serving so they stay bright and fresh rather than wilting into the soup.
Texture tips
- Blend thoroughly: For the smoothest finish, blend until no visible leek or potato fibres remain, working in batches if needed.
- Loosen after chilling: The soup can thicken in the fridge; whisk in a little cold vegetable stock before serving if you prefer a lighter consistency.
Common mistakes
- Avoid browning the leeks: Keep the heat low while softening the leeks and onion; colour will make the soup taste sweeter, darker and less delicate.
- Do not boil after adding cream: Warm the cream gently into the blended soup, as boiling can dull the texture and risk splitting.
Ingredient notes
- Clean the leeks carefully: Leeks often hold grit between their layers, so slicing them lengthways and rinsing well is essential for a clean finished soup.
- Cream affects the finish: Double cream gives the richest, silkiest result; a lighter cooking cream will still work but the soup will feel less luxurious when chilled.

Instructions
- Peel the potatoes and cut into small, even chunks. Halve, peel and finely slice the onion. Trim the leeks, slice lengthways, rinse thoroughly to remove grit, then slice.
- Melt the butter in a saucepan over a low heat. Add the onion and leeks with the salt and cook for 10 to 12 minutes, stirring often, until very soft but not coloured. Stir in the white pepper.
- Add the potatoes and vegetable stock, bring to a gentle simmer, then reduce the heat to low. Cook for 18 to 22 minutes, or until the potatoes are completely tender. Remove from the heat and let it stand for 5 minutes to cool slightly.
- Blend the soup until perfectly smooth, working in batches if needed. Return it to the pan and stir in the double cream over a low heat just until warmed through; do not let it boil. Taste and adjust seasoning with a little more salt or white pepper if needed.
- Pour into a bowl, cover and chill for at least 50 minutes, until properly cold. Finely chop the chives. Ladle into bowls and sprinkle with chives to serve.
Recipe notes
Tips
- For the cleanest flavour, keep the heat low when cooking the leeks and onion so they soften without browning.
- If blending hot soup, fill the blender jug only halfway and vent the lid slightly to let steam escape.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the soup is cooled and chilled promptly and kept refrigerated until serving.
Substitutions
- Replace Double cream with Cooking cream for a lighter finish; chill well as it will feel less rich.
- Replace Unsalted butter with Olive oil for a slightly fruitier flavour.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge and stir before serving, as it can thicken slightly when chilled. If you prefer it looser, whisk in a splash of cold vegetable stock before serving.
