Turrón de Jijona (Soft Almond Nougat)

Soft, sliceable and rich with almonds, Turrón de Jijona is the tender style of Spanish nougat traditionally associated with festive sweets. Unlike the hard, brittle Alicante version, it has a dense, creamy texture made by working finely ground toasted almonds into a honey-sugar syrup, then lightening the mixture with egg white before it sets. Lemon zest and a little cinnamon keep the sweetness fragrant rather than flat. Serve it in small pieces with coffee, after-dinner drinks or as part of a dessert selection; its richness means neat, modest slices are ideal.

Why this recipe works

  • Classic nougat method: Cooking the honey and sugar syrup to 120°C (250°F) gives the turrón enough structure to set while keeping it soft rather than brittle.
  • Soft, creamy texture: Finely processed almonds release their natural oils, creating the smooth, dense paste that defines Jijona-style turrón.
  • Balanced sweetness: Lemon zest and a little juice cut through the richness of the almonds and honey without making the nougat taste sharp.

Timing notes

  • Cool the almonds fully: Let the toasted almonds cool before processing so they grind evenly and do not become hot, greasy nut butter too quickly.
  • Allow time to set: The turrón needs a proper chill after pressing into the tin so it becomes firm enough to slice cleanly.
  • Serve slightly softened: After refrigeration, let the slices stand briefly at room temperature for the best creamy, almond-rich texture.

Texture tips

  • Process to a glossy paste: For a finer finish, keep scraping down the food processor until the almonds look slightly shiny and begin to clump.
  • Use gentle final heat: When thickening the almond mixture, keep the heat low and stir constantly; catching on the pan can make the flavour bitter and the texture gritty.
  • Press firmly into the tin: Compact the mixture well in the lined loaf pan so the finished turrón sets evenly and slices without gaps.

Ingredient notes

  • Use good almonds: Almonds are the main flavour, so choose fresh, sweet-smelling nuts and toast them just until fragrant and lightly coloured.
  • Honey shapes the flavour: A mild honey keeps the almond flavour clear, while a darker or more aromatic honey will make the turrón more pronounced.
  • Egg white safety: Use pasteurised egg white if serving anyone who is pregnant, elderly or immunocompromised.

Authenticity notes

  • Jijona style: Turrón de Jijona is known for its soft, ground-almond texture, distinct from the harder Alicante-style turrón made with whole almonds.
  • How it is served: Serve in small slices with coffee, tea or dessert wine as part of a sweet course or festive selection.

  1. Toast the almonds in a dry frying pan over a medium heat for 6 to 8 minutes, stirring often, until fragrant and lightly coloured. Tip onto a plate and leave to cool completely. Once cool, blitz in a food processor to a fine, slightly oily paste, stopping to scrape down as needed.
  2. Line a loaf pan with baking paper, leaving an overhang so you can lift the turrón out later. Finely zest the lemon, then squeeze the juice. Keep both ready by the hob.
  3. Put the honey, caster sugar and water in a saucepan and warm over a medium heat, stirring just until the sugar dissolves. Increase the heat and simmer without stirring until the syrup reaches 120°C (250°F). Remove from the heat and stir in the lemon zest and 1 tbsp lemon juice.
  4. In a mixing bowl, whisk the egg white to soft peaks. With the mixer running on a low speed, slowly pour in the hot syrup in a thin stream. Continue whisking for 2 to 3 minutes until the mixture looks glossy and slightly thickened.
  5. Switch to a spatula and fold in the ground almonds and ground cinnamon until fully combined and smooth. Return the mixture to the saucepan and cook over a low heat for 6 to 10 minutes, stirring constantly, until very thick and it pulls away from the sides. It should feel like a dense, warm paste.
  6. Scrape the mixture into the lined loaf pan and press it down firmly, smoothing the top. Leave at room temperature for 30 minutes, then chill until fully set and sliceable. Lift out using the paper overhang and slice with a warm knife.

Recipe notes

Tips

  • For the smoothest texture, process the almonds until they start to clump and look slightly glossy, but stop before they turn into a fully pourable nut butter.
  • Keep the heat low when thickening the mixture at the end; if it catches, the turrón can taste bitter and the texture will be grainy.
  • Food safety note: if you are pregnant, elderly, or immunocompromised, use pasteurised egg white.

Substitutions

  • Replace Ground cinnamon with 0.25 tsp ground cardamom for a more aromatic, less traditional spice note.
  • Replace Lemon with orange zest and 1 tbsp orange juice for a softer citrus flavour.

Storage

  • Refrigerate up to 14 days
  • Store in an airtight container in the fridge, separating slices with baking paper to prevent sticking. For the best texture, let it sit at room temperature for 10 to 15 minutes before serving. Freeze well wrapped, then thaw overnight in the fridge.
