Red Velvet Cake with Cream Cheese Frosting
Why this recipe works
- Creamy frosting contrast: Cold cream cheese and softened butter create a thick, tangy frosting that balances the soft cocoa sponge.
- Balanced tang: Buttermilk and vinegar add the gentle acidity associated with red velvet while helping the cake rise evenly.
- Easy to serve neatly: A short chill firms the frosting, making the finished cake easier to slice and transport.

Ingredient notes
- Use room-temperature eggs: Room-temperature eggs blend more smoothly into the oil and sugar mixture, helping the batter stay even.
- Choose a mild cocoa: Red velvet should have a subtle cocoa flavour rather than a deep chocolate profile, so a standard unsweetened cocoa works well.
- Keep the cream cheese cold: Cold cream cheese helps the frosting thicken quickly and reduces the risk of it becoming loose.
Texture tips
- Mix the flour in briefly: Stop as soon as no dry streaks remain; overmixing can make the sponge heavier and less tender.
- Sift the icing sugar: Sifting prevents lumps and gives the cream cheese frosting a smoother finish.
- Chill before slicing: A brief chill sets the frosting so the layers hold cleanly when cut.
Common mistakes
- Waiting too long after the vinegar mixture: Stir the vinegar and bicarbonate of soda together, then add it to the batter straight away while it is still fizzing.
- Starting with cold eggs: Cold eggs can make the batter harder to emulsify, so let them come to room temperature before mixing.
- Frosting while the cakes are warm: Warm cake layers will soften the frosting and can cause it to slide, so cool the sponges completely first.
Make-ahead tips
- Bake the layers in advance: The cake layers can be baked ahead, cooled completely and kept well wrapped before frosting.
- Chill after frosting: Refrigerating the finished cake helps the cream cheese frosting set and makes the layers easier to portion.
- Freeze individual slices: Wrap slices well and freeze after baking and frosting, then defrost overnight in the fridge.

Instructions
- Heat the oven to 175°C (345°F). Grease and line two 20 cm cake tins.
- In a bowl, whisk together the flour, cocoa powder and salt until evenly combined. Set aside.
- In a large bowl, whisk the caster sugar and sunflower oil until glossy. Whisk in the eggs one at a time until smooth.
- Whisk in the buttermilk and liquid food coloring until the batter is evenly red. Scrape down the bowl as needed.
- Add the dry ingredients and whisk just until you no longer see streaks of flour. Do not overmix.
- In a small bowl, stir together the white wine vinegar and bicarbonate of soda; it will fizz. Immediately whisk it into the batter.
- Divide the batter between the tins and level the tops. Bake for 25 to 30 minutes, until the cakes spring back and a skewer comes out clean.
- Cool the cakes in the tins for 10 minutes, then turn out onto a cooling rack. Leave to cool completely before frosting.
- For the frosting, beat the butter until creamy. Add the cream cheese and beat briefly until just combined and smooth.
- Sift in the icing sugar and add the vanilla extract, then beat on low until combined. Increase the speed and beat for 30 to 60 seconds until thick and spreadable.
- Place one cake layer on a plate and spread over about a third of the frosting. Top with the second layer, then frost the top and sides.
- Chill the cake for at least 30 minutes so the frosting sets. Slice with a warm, dry knife for neat portions.
Recipe notes
Tips
- For the cleanest layers, make sure the cakes are completely cool before frosting, otherwise the frosting will soften and slide.
- If the frosting feels loose, chill it for 10 to 15 minutes, then beat briefly again until it holds its shape.
- Food safety note: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are produced to be eaten lightly cooked and ensure the cake is baked through.
Substitutions
- Replace white wine vinegar with apple cider vinegar for a slightly fruitier tang.
- Replace sunflower oil with vegetable oil for a similar neutral flavour and texture.
- Replace vanilla extract with madagascar vanilla paste for a more pronounced vanilla flavour.
Storage
- Refrigerate up to 4 days
- Store the cake covered in the fridge. For best texture, let slices sit at room temperature for 20 minutes before serving; freeze individual slices well wrapped and defrost overnight in the fridge.
