Air Fryer Cod Fillets
Why this recipe works
- Crisp breadcrumb coating: Rubbing oil into the crumbs helps them brown evenly in the air fryer rather than drying out.
- Fast weeknight cooking: Thin cod fillets cook quickly, so the whole dish can be on the table in under 30 minutes.
- Bright finish: Lemon cuts through the savoury crumb coating and lifts the mild flavour of the cod.
- Straightforward method: The flour, egg and breadcrumb coating is easy to assemble and gives reliable structure to the crust.

Texture tips
- Dry the fish well: Pat the cod thoroughly dry before breading so the flour sticks properly and the coating can crisp.
- Oil the crumbs evenly: Work the oil through the breadcrumbs before coating the fish; this helps the crust colour evenly in the air fryer.
- Check for flaking: Cook just until the cod flakes easily when nudged with a fork, adding a short extra cook only for thicker fillets.
Make-ahead tips
- Best served fresh: The breadcrumb coating is at its crispest straight from the air fryer, so serve the cod as soon as it is cooked.
- Reheat in the air fryer: Reheat chilled leftovers at 190°C (375°F) until piping hot and the coating has re-crisped.
Serving ideas
- Classic sides: Serve with peas, chips, potato wedges or a crisp green salad for a simple fish supper.
- Add a sauce: Tartare sauce, yoghurt-based dill sauce or a quick mayonnaise-based dip all work well with the crunchy coating.
- Finish with lemon: A squeeze of lemon just before serving adds brightness and balances the savoury breadcrumbs.

Ingredients
Instructions
- Heat the air fryer to 200°C (390°F) for 3 minutes. Pat the cod dry with kitchen paper and set on a plate.
- Set up a breading line: put the flour in a shallow bowl, whisk the egg in a second, and mix the breadcrumbs with the smoked paprika, fine sea salt and black pepper in a third. Drizzle the rapeseed oil into the breadcrumb mixture and rub it in with your fingertips so it looks evenly lightly oiled.
- Coat each cod fillet in the flour, shaking off any excess, then dip in the egg and let the excess drip off. Press into the seasoned breadcrumbs so the fish is fully coated, especially along the sides.
- Air-fry the cod in a single layer for 10 to 12 minutes, turning carefully halfway through, until deep golden and the fish flakes easily when nudged with a fork. If your fillets are thick, give them another 1 to 2 minutes.
- Cut the lemon into wedges. Serve the cod straight away with lemon to squeeze over the top.
Recipe notes
Tips
- For the best crust, make sure the cod is well dried before breading, as moisture can stop the crumbs browning.
- Avoid overcrowding the basket; cook in batches if needed so the hot air can circulate and the coating stays crisp.
- If serving anyone vulnerable to food poisoning, use pasteurised egg where available and ensure the fish is cooked until piping hot throughout.
Substitutions
- Replace smoked paprika with sweet paprika for a milder, less smoky flavour.
- Replace rapeseed oil with olive oil for a fruitier finish and slightly deeper colour.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until piping hot and re-crisped.
