Air Fryer Mini Apple Pies
Why this recipe works
- Crisp pastry: Chilled shortcrust pastry and a hot air-fryer environment help the pies bake up golden, crisp and flaky.
- Balanced fruit filling: Bramley apples, lemon juice and brown sugar create a filling that is sweet, sharp and rounded rather than flat.
- Quicker than a full pie: Individual moulds and air frying shorten the baking time while keeping the familiar apple pie structure.

Ingredient notes
- Use Bramley apples for softness: Bramleys break down readily, giving the filling a tender texture and bright apple flavour.
- Keep the pastry cold: Work with chilled shortcrust pastry so it is easier to shape and less likely to slump in the moulds.
- Balance the lemon: Lemon juice sharpens the apple filling; adjust to taste if your apples are particularly tart.
Timing notes
- Cool the filling fully: Warm filling can soften the pastry before baking, so let it cool completely before assembling the pies.
- Let the pies stand: A short rest after air frying allows the filling to settle, making the pies easier to serve.
- Best served warm: The pastry is at its crispest soon after baking, while the apple filling is still soft and aromatic.
Make-ahead tips
- Make the filling ahead: The apple filling can be cooked in advance and chilled, then used once completely cold.
- Reheat in the air fryer: Reheat chilled pies at 170°C (340°F) until piping hot and the pastry has crisped again.
- Freeze after baking: Cool the pies completely before freezing well wrapped; thaw in the fridge before reheating.

Instructions
- Peel, core and cut the apples into 1 cm pieces. Finely zest the lemon, then juice it. Beat the egg in a small bowl for the egg wash.
- Melt the butter in a saucepan over a medium heat, then add the apples, light brown sugar, cinnamon, lemon zest and 2 tbsp lemon juice. Cook for 8 to 10 minutes, stirring, until the apples are tender and the juices are syrupy rather than watery. Stir in the vanilla extract, then tip into a bowl to cool completely.
- On a lightly floured surface, roll the shortcrust pastry to about 3 mm thick. Cut out 4 circles large enough to line 4 individual pie moulds, then cut out 4 slightly smaller circles for lids. Line the moulds with the larger circles, pressing gently into the corners.
- Divide the cooled apple filling between the pastry cases. Brush the rim of each case with a little beaten egg, then lay on the pastry lids and press to seal. Brush the tops with more egg, then sprinkle over the caster sugar.
- Air-fry at 180°C (355°F) for 14 to 16 minutes, until deep golden and crisp. Leave the pies to stand for 5 minutes so the filling settles. Serve warm.
Recipe notes
Tips
- Cool the filling fully before assembling so the pastry stays flaky and does not slump.
- If the tops brown too quickly in your air fryer, reduce to 170°C (340°F) for the final few minutes.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are pasteurised and keep the pies piping hot.
Substitutions
- Replace Vanilla extract with the finely grated zest of the lemon for a brighter finish.
- Replace Caster sugar with Light brown sugar for a slightly more caramel-like crunch on top.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in an airtight container. Reheat in the air fryer at 170°C (340°F) for 5 to 7 minutes until piping hot. Freeze the cooled pies well wrapped for up to 2 months; thaw overnight in the fridge before reheating.
