Tuna Avocado Cucumber Poke Bowl

A poke bowl brings together seasoned rice, raw fish and crisp toppings in a format that is fresh, filling and easy to customise. This version uses sushi rice as a glossy, lightly vinegared base, topped with sashimi-grade tuna dressed in soy sauce, toasted sesame oil and spring onion. Cucumber adds clean crunch, avocado brings gentle richness, and nori strips with roasted sesame seeds give the bowl its savoury, seaweed-led finish. Best assembled just before serving, it makes a quick lunch that relies on good fish, well-cooled rice and simple, precise seasoning.

Why this recipe works

  • Quick to assemble: Once the rice is cooked, the toppings need only simple cutting and gentle dressing.
  • Clean texture contrast: Soft rice, tender tuna, creamy avocado and crisp cucumber give each bowl balance without heavy sauces.
  • Light seasoning: Rice vinegar and soy sauce season the rice and tuna without overwhelming the fresh fish.

Ingredient notes

  • Use suitable tuna: Choose sashimi-grade tuna from a reliable supplier and keep it chilled until you are ready to dice and dress it.
  • Pick firm avocado: Use an avocado that is ripe but still firm, so it slices cleanly and holds its shape in the bowl.
  • Cut nori last: Slice the nori shortly before serving so the strips stay dry and delicate rather than softening early.

Timing notes

  • Cool the rice briefly: Let the seasoned rice cool to just warm before assembling; hot rice can dull the freshness of the tuna and soften the avocado.
  • Serve soon after assembly: The bowl is at its best straight away, while the fish is chilled, the cucumber is crisp and the nori still has texture.

Texture tips

  • Keep toppings separate until serving: Build the bowls at the last moment so the cucumber, nori and sesame seeds keep their contrast against the rice.
  • Handle the rice gently: Fold in the vinegar without pressing the grains, which helps the rice stay glossy rather than compacted.

Serving ideas

  • Add a simple side: Serve with edamame, miso soup or a small cucumber salad for a fuller lunch.
  • Finish just before eating: Extra spring onion, sesame seeds and nori give the bowl a fresher finish when added at the table.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with 225 ml water, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Spoon the rice vinegar over the warm rice and gently fold to coat without crushing the grains. Leave the rice to cool to just warm while you prep the toppings. It should look glossy and taste lightly seasoned.
  3. Dice the tuna into bite-sized pieces and put into a mixing bowl. Add the soy sauce, toasted sesame oil, and most of the spring onion (reserve a little for finishing), then toss gently. Let it stand while you prepare the vegetables.
  4. Cut the cucumber into small cubes and slice the avocado. Cut the nori sheets into thin strips using a knife or clean kitchen scissors. Keep everything separate so you can build neat bowls.
  5. Divide the rice between two bowls and top with the dressed tuna, cucumber and avocado. Sprinkle over the nori strips, roasted sesame seeds, and the reserved spring onion. Serve straight away.

Recipe notes

Tips

  • For the best texture, cool the rice to just warm before assembling so the tuna stays fresh and the avocado does not soften.
  • If serving raw tuna, choose sashimi grade fish and keep it chilled until the moment you dice and dress it.

Substitutions

  • Replace rice vinegar with white wine vinegar for a slightly sharper finish.
  • Replace roasted sesame seeds with white sesame seeds, briefly toasted in a dry frying pan until fragrant.

Storage

  • Refrigerate up to 1 days
  • Best assembled and eaten straight away. If needed, refrigerate leftovers promptly in a sealed container and eat within 24 hours; the rice will firm up and the avocado will darken.
