Avocado Sriracha Poke Bowl
Why this recipe works
- Fast assembly: Once the rice is cooked and cooled, the bowl comes together quickly with fresh toppings and a simple stirred dressing.
- Fresh texture contrast: Soft salmon and avocado are balanced by crisp cucumber, toasted sesame seeds and strips of nori.
- Balanced richness: Rice vinegar brightens the sushi rice, while soy, sesame oil and sriracha keep the salmon savoury, aromatic and gently spicy.

Ingredient notes
- Choose the salmon carefully: Use salmon specifically labelled as suitable for eating raw, and keep it chilled until the bowl is ready to assemble.
- Use firm-ripe avocado: The avocado should be ripe enough to taste creamy but firm enough to slice cleanly and hold its shape in the bowl.
Adjust the heat
- For gentler heat: Start with less sriracha in the dressing, then taste and add more only if you want a stronger chilli kick.
- For extra heat: Increase the sriracha to taste, keeping enough soy and sesame oil in the dressing so the flavour stays balanced.
Timing notes
- Serve straight away: Poke bowls are best assembled just before eating so the raw salmon stays cold and the toppings keep their texture.
- Cool the rice first: Let the seasoned rice cool to just warm or room temperature before adding the salmon, avocado and cucumber.
Make-ahead tips
- Keep components separate: If preparing ahead, refrigerate the salmon, toppings and rice separately, then assemble only when ready to serve.
- Best eaten the same day: Because the bowl contains raw fish and avocado, it is at its best immediately and should not be kept at room temperature.

Ingredients
Instructions
- Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan, cover with water and bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
- Stir the rice vinegar through the hot rice, then spread the rice out in a wide bowl so it cools quickly. Leave until just warm or room temperature. Meanwhile, mix the soy sauce, sesame oil and sriracha in a bowl.
- Cut the salmon into bite-sized cubes and gently toss with half the dressing. Cut the cucumber into bite-sized pieces, slice the avocado, and finely slice the spring onion. Cut or crumble the nori sheets into thin strips.
- Divide the rice between two bowls, then top with the dressed salmon, cucumber and avocado. Drizzle over the remaining dressing, then finish with spring onion, roasted sesame seeds and nori. Serve straight away.
Recipe notes
Tips
- Only use salmon labelled suitable for eating raw, and keep it chilled right up until you assemble the bowls.
- If you prefer a gentler heat, start with 1 tsp sriracha, taste the dressing, then add the rest if you want more kick.
Substitutions
- Replace sriracha with hot sauce for a cleaner, more vinegary heat.
- Replace rice vinegar with white wine vinegar if needed.
Storage
- Refrigerate up to 1 days
- Best eaten immediately because of the raw salmon. If you must store it, keep rice and toppings separate and refrigerate; do not leave at room temperature, and eat within 24 hours.
