Thai Spicy Noodle Salad (Modern)
Why this recipe works
- Sharp, balanced dressing: Lime, fish sauce, palm sugar and soy create the salty-sour-sweet balance that gives the noodles their lively flavour.
- Fresh crunch: Cool cucumber, carrot ribbons and roasted peanuts contrast with the soft, springy noodles.
- Fast assembly: The noodles cool quickly under running water, so the salad can be mixed and served in under 30 minutes.
- Easy to adjust: Chilli, herbs and nuts can be varied without changing the basic balance of the salad.

Adjust the heat
- For less heat: Remove the chilli seeds or use less chilli, then taste the dressing before adding more.
- For extra chilli: Add more finely sliced red chilli or include a hotter variety if you want a sharper, more assertive finish.
- Keep the dressing balanced: If the salad tastes too fiery, soften it with a little more lime sweetness balance rather than diluting the dressing.
Ingredient notes
- Choose springy rice noodles: Rice noodles should be tender but not collapsing; follow the packet timing closely and cool them fully before dressing.
- Fish sauce matters: A good fish sauce gives savoury depth without harshness, which is important in a salad with no long cooking time.
- Use fresh herbs: Fresh coriander brings brightness and texture; dried herbs will not give the same clean, cooling effect.
Texture tips
- Drain the noodles well: After rinsing, shake off excess water thoroughly so the dressing clings rather than becoming diluted.
- Keep the peanuts crunchy: Add the roasted peanuts just before serving, especially if the salad has been chilled for later.
- Toss just before serving: A final toss redistributes the dressing and loosens the noodles for a fresher texture.
Make-ahead tips
- Make ahead for lunch: The dressed noodle salad can be kept chilled and served cold or briefly brought towards room temperature before eating.
- Separate the peanuts: Store the peanuts apart from the salad and scatter them over at the last minute to preserve their crunch.
- Refresh before serving: Toss well after chilling, as the dressing can settle at the bottom of the container.

Instructions
- Cook the rice noodles in a large pot of just-boiled water until tender but still springy, following the packet timing. Drain in a colander and rinse well under cold running water until completely cool. Shake off excess water and tip into a large mixing bowl.
- Finely grate the zest of 1 lime, then juice both limes into a small bowl. Add the fish sauce, palm sugar, light soy sauce and toasted sesame oil, then grate in the garlic. Stir until the palm sugar dissolves, then finely slice the red chili pepper and mix it in.
- Cut the cucumber into thin matchsticks and peel the carrot into ribbons or thin strips, then add both to the noodles. Roughly chop the fresh coriander and add it to the bowl. Pour over the dressing and toss thoroughly until everything is evenly coated.
- Roughly chop the roasted peanuts and scatter them over the salad. Serve chilled or at room temperature, tossing once more just before serving so the dressing is glossy and well distributed.
Recipe notes
Tips
- For the best texture, rinse the noodles until they are fully cold, then drain well so the dressing clings rather than diluting.
- If serving later, keep the roasted peanuts separate and add them at the last minute so they stay crunchy.
- If you are pregnant, elderly, or immunocompromised, choose a reputable brand of fish sauce and keep the finished salad properly chilled.
Substitutions
- Replace roasted peanuts with roasted cashew nuts for a similar crunch and richness.
- Replace fresh coriander with fresh mint for a brighter, more cooling finish.
- Replace light soy sauce with dark soy sauce for a deeper colour and slightly sweeter, fuller flavour.
Storage
- Refrigerate up to 2 days
- Store in an airtight container in the fridge. For best texture, add the roasted peanuts just before serving; if already mixed in, expect them to soften. Serve cold, or let it sit at room temperature for 10 minutes and toss well before eating.
