Vitello Tonnato (Chilled Veal with Tuna and Caper Sauce)

Vitello tonnato is a classic Italian cold antipasto where delicate slices of veal are dressed with a smooth tuna, caper and lemon sauce. The dish is prized for its unusual but elegant pairing: mild, tender meat against a savoury, briny sauce with gentle acidity and a creamy texture. Here the veal is poached softly with aromatics, then chilled for clean slicing, while the sauce is blended until spoonable and rich. Served well chilled and finished with capers, it makes a refined make-ahead starter for lunch, dinner parties or an Italian-style spread.

Why this recipe works

  • Gentle poaching keeps the veal tender: Cooking the veal at a bare simmer helps preserve its delicate texture and prevents the meat from tightening.
  • The sauce is smooth and spoonable: Blending tuna, egg yolk, mustard, lemon and olive oil creates a rich sauce that coats the sliced veal evenly.
  • Lemon and capers cut through the richness: Bright citrus and salty capers keep the tuna sauce lively rather than heavy.
  • Built for advance preparation: Both the veal and sauce benefit from chilling, making the dish well suited to serving as a prepared starter.

Timing notes

  • Chill before slicing: The veal slices more neatly once fully cold and firm, so avoid rushing the chilling stage.
  • Serve cold: Vitello tonnato is best served straight from the fridge, or after a brief stand at room temperature for a softer texture.

Texture tips

  • Keep the poach gentle: Let the liquid barely tremble rather than boil; aggressive heat can toughen the veal.
  • Loosen the sauce gradually: If the sauce is too thick, blend in a little chilled poaching liquid until it is creamy but still coats the meat.

Ingredient notes

  • Choose good canned tuna: Because tuna is central to the sauce, a well-drained, good-quality canned tuna gives a cleaner savoury flavour.
  • Use pasteurised yolk when needed: For anyone pregnant, immunocompromised, very young or older, pasteurised egg yolk is the safer choice.
  • Season the sauce at the end: Taste after blending, then adjust with extra lemon or salt only if needed, as capers already bring salinity.

Make-ahead tips

  • Keep veal and sauce separate: Store the sliced or whole chilled veal and tuna sauce in separate airtight containers for the cleanest texture.
  • Assemble before serving: Spoon the sauce over the veal shortly before serving so it settles evenly without making the platter look heavy.

  1. Put the veal in a saucepan in a single layer. Add the onion, carrot, celery, bay leaves, peppercorns, fine sea salt and water, making sure the veal is just covered. Set over medium heat and bring to a gentle simmer.
  2. Lower the heat so the liquid barely trembles, then poach until the veal is just cooked through and tender. Keep it at a gentle poach rather than a boil to avoid toughening the meat. Lift the veal out to a plate.
  3. Strain the poaching liquid into a bowl and discard the aromatics. Let the veal cool for 10 minutes, then cover and chill until fully cold. Chill the strained liquid as well; you will use a little to loosen the sauce if needed.
  4. Drain the tuna well. In a blender, combine the tuna, egg yolks, Dijon mustard and the juice of the lemon, then blend until smooth. With the motor running, slowly drizzle in the olive oil until the sauce turns thick and creamy.
  5. If the sauce is too thick, blend in 1 to 2 tablespoons of the chilled poaching liquid until it is spoonable. Stir in most of the capers, reserving a few to finish. Taste and season with the remaining fine sea salt and a little more lemon juice if you like.
  6. Slice the chilled veal as thinly as you can. Arrange on a serving platter and spoon over the tuna sauce, letting it settle into an even layer. Scatter over the reserved capers and serve cold.

Recipe notes

Tips

  • For the neatest slices, chill the veal until it feels firm, then slice with a long, sharp knife in smooth strokes.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolk.

Substitutions

  • Replace Dijon mustard with whole-grain mustard for a coarser, more rustic sauce.
  • Replace extra virgin olive oil with light olive oil for a milder, less peppery finish.

Storage

  • Refrigerate up to 2 days
  • Store the veal and sauce separately in airtight containers. Serve straight from the fridge, or let the veal sit at room temperature for 10 minutes for a softer texture; do not leave out longer than necessary.
