Pasta alla Carrettiera Siciliana (Garlic and Chilli Pasta)
Why this recipe works
- Fast pantry cooking: The sauce comes together while the spaghetti cooks, making it well suited to a quick weeknight meal.
- Simple ingredients, clear flavour: Garlic, chilli, black pepper, parsley and pecorino each add a distinct savoury note without weighing down the pasta.
- Crunch against glossy pasta: Toasted breadcrumbs contrast with the slick olive oil coating, giving the finished dish more structure and bite.

Adjust the heat
- For a gentler heat: Reduce the chilli flakes and let the garlic and pecorino carry more of the flavour.
- For more warmth: Add extra chilli flakes to the oil, keeping the heat low so the spices bloom without scorching.
- Keep it rounded: Finish with parsley and cheese after tossing; their freshness and saltiness help balance the chilli.
Authenticity notes
- Sicilian style: This version reflects the lean, pantry-led character of southern Italian pasta cooking, where oil, garlic, chilli and breadcrumbs create a complete dish.
- Breadcrumb finish: Toasted breadcrumbs are a classic way to add savoury crunch, especially in pasta dishes where the sauce is light rather than tomato-based.
- Cheese optionality: Pecorino gives a sharper, saltier finish, while Parmesan makes the dish milder if that is what you have available.
Ingredient notes
- Use good olive oil: Extra-virgin olive oil is central to the sauce, so choose one with a clean flavour rather than a harsh or tired taste.
- Slice the garlic thinly: Thin slices flavour the oil quickly and cook evenly, reducing the risk of bitter browned pieces.
- Mind the cheese: Pecorino Romano is salty, so taste before adding extra seasoning at the end.
Common mistakes
- Browning the garlic too far: Keep the pan on low heat once the oil goes in; garlic should turn fragrant and pale gold, not dark brown.
- Letting the oil stay separate: Add pasta water gradually and toss vigorously so the starch helps the oil form a glossy coating.
- Adding breadcrumbs too early: Scatter the toasted breadcrumbs over the pasta just before serving so they keep their crunch.

Instructions
- Bring a large pot of water to the boil and season it with the fine sea salt. Add the spaghetti and cook until just al dente, stirring occasionally. Before draining, reserve about 150 ml of the pasta cooking water.
- Meanwhile, set a large frying pan over medium heat and toast the breadcrumbs, stirring, until golden and nutty. Tip them into a bowl straight away so they do not darken further in the hot pan.
- Return the pan to low heat and add the extra virgin olive oil. Thinly slice the garlic, then cook it gently in the oil until fragrant and just turning pale gold. Stir in the chili flakes and black pepper for 30 seconds.
- Add a splash of the reserved pasta water to the pan and swirl to emulsify into a glossy sauce. Drain the spaghetti and add it to the pan, tossing vigorously and adding more pasta water a little at a time until the strands look slick and coated. Take off the heat.
- Finely chop the fresh parsley and stir most of it through the pasta. Divide between bowls and scatter over the toasted breadcrumbs. Grate over the Pecorino Romano cheese and finish with the remaining parsley.
Recipe notes
Tips
- Keep the heat low when cooking the garlic so it turns pale gold, not brown, which can make the sauce bitter.
- Toss the pasta hard with a little pasta water to help the olive oil emulsify into a glossy coating rather than sitting oily in the pan.
- If serving to anyone who is pregnant, elderly, or immunocompromised, use a hard cheese made with pasteurised milk.
Substitutions
- Replace Spaghetti with Linguine for a slightly flatter strand that holds the sauce well.
- Replace Chili flakes with Smoked hot paprika for a gentler heat and a smoky edge.
- Replace Pecorino Romano cheese with Parmesan for a milder, less salty finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a frying pan over low heat with a splash of water until piping hot, then add a fresh sprinkle of Breadcrumbs to restore crunch.
