Risotto Leggero alle Verdure (Light Vegetable Risotto)
Why this recipe works
- Creamy without heaviness: Arborio rice releases starch gradually as the hot stock is added, creating a naturally creamy texture with only Parmesan and olive oil to finish.
- Clean savoury balance: Dry white wine adds brightness early in the cooking, helping balance the richness of the rice and cheese.
- Fresh vegetable finish: Adding asparagus and peas towards the end keeps their colour and tenderness, giving the risotto a lighter, fresher character.

Timing notes
- Keep the stock hot: The stock should stay at a gentle simmer before it is added to the rice; cold stock interrupts cooking and makes the risotto less creamy.
- Rest before serving: A short covered rest after adding the Parmesan helps the rice settle and the texture become glossy rather than loose and watery.
- Serve promptly: Risotto is best served as soon as it reaches a loose, flowing consistency; it thickens quickly as it stands.
Texture tips
- For a creamier finish: Stir often and add the stock gradually, waiting until the pan is nearly dry before adding more.
- Loosen if needed: If the risotto tightens before serving, stir in a little hot stock until it slowly spreads on the plate.
Ingredient notes
- Use risotto rice: Arborio rice is important here because its starch gives the dish its classic creamy texture.
- Add vegetables late: Asparagus and peas need only a short time in the pan, which keeps them tender, bright and fresh-tasting.
- Finish with good cheese: A finely grated hard cheese melts more evenly and gives the risotto a smoother savoury finish.
Ingredient swaps
- Without wine: Replace the dry white wine with extra vegetable stock for an alcohol-free version.
- Cheese alternative: Grana Padano can be used instead of Parmesan for a similar but slightly milder finish.

Instructions
- Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Meanwhile, trim the asparagus and cut it into bite-size pieces.
- Warm the extra virgin olive oil in a large frying pan over a medium heat. Finely chop the yellow onion, then cook it with a pinch of the fine sea salt for 6 to 8 minutes until soft but not coloured.
- Crush the garlic and stir it in for 30 seconds until fragrant. Add the arborio rice and stir for 1 to 2 minutes until the grains look slightly translucent at the edges.
- Pour in the dry white wine and stir until it has almost completely evaporated. Start adding the hot stock a ladleful at a time, stirring often and only adding more once the pan is nearly dry.
- After about 12 minutes of stock additions, stir in the asparagus. Continue cooking, adding stock as needed, until the rice is al dente and the risotto is loose and creamy.
- Stir in the frozen peas for 2 to 3 minutes until hot and bright green. Take the pan off the heat, finely grate in the Parmesan, then cover and rest for 2 minutes before serving.

Tips
- Keep the stock at a gentle simmer: adding cold stock slows cooking and makes the texture less creamy.
- Aim for a risotto that slowly spreads when spooned onto a plate; if it tightens up, loosen it with a splash of hot stock just before serving.
- If serving anyone who is pregnant, elderly, or immunocompromised, use a pasteurised hard cheese in place of Parmesan.
Substitutions
- Replace Dry White Wine with extra Vegetable stock for an alcohol-free version.
- Replace Parmesan with Grana padano cheese for a similar, slightly milder finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a frying pan with a splash of vegetable stock, stirring until piping hot and creamy again.
