Gravlax Platter with Dill, Rye Bread and Mustard Sauce
Why this recipe works
- Classic curing method: Salt and sugar draw moisture from the salmon while dill and pepper season it gently during the long chill.
- Designed for advance prep: The salmon cures in the fridge, so the main work is done well before serving.
- Sharp, clean contrast: Mustard, vinegar and lemon cut through the richness of the cured salmon and keep the platter bright.
- Easy to serve: Thin slices, rye bread and sauce make it suitable for starters, buffets or a relaxed sharing board.

Timing notes
- Allow for the full cure: The salmon needs a long refrigerated cure, so start it at least a day before you plan to serve.
- Slice close to serving: For the best texture, keep the cured salmon chilled and slice it shortly before arranging the platter.
Ingredient notes
- Choose suitable salmon: Use very fresh, properly handled salmon, ideally previously frozen and suitable for raw consumption.
- Use fresh dill: Fresh dill gives the cure its characteristic clean, herbal flavour; dried dill will taste flatter and less aromatic.
- Balance the sauce to taste: Add lemon juice gradually so the mustard sauce stays sharp without overpowering the salmon.
Texture tips
- Pat the salmon dry: After curing, remove the cure and pat the fish dry so the surface is clean and easy to slice.
- Slice with a sharp knife: Use a long, sharp blade and cut thinly on the diagonal for neat, silky slices.
Authenticity notes
- Serve with rye and mustard sauce: Rye bread, dill, lemon and mustard sauce are classic accompaniments that complement the salty, herby cured salmon.
- A chilled starter: Gravlax is typically served cold in thin slices, making it well suited to appetiser platters and festive spreads.

Instructions
- Check the salmon for any remaining pin bones and remove them. Lightly crush the peppercorns with the side of a knife or in a bowl with the end of a rolling pin. Roughly chop the dill.
- In a bowl, mix the caster sugar, fine sea salt, crushed peppercorns and most of the dill, reserving a little dill for serving. Rub the cure all over the flesh side of the salmon, pressing it in evenly.
- Place the salmon skin-side down in a dish and cover tightly (a snug lid or well-sealed covering works). Refrigerate for 36 hours, turning the salmon once halfway through and spooning any liquid over the top.
- Lift the salmon out and scrape off the cure; pat dry with kitchen paper. Using a sharp knife, slice the gravlax very thinly on the diagonal, keeping the blade close to the skin.
- Make the mustard sauce by whisking the Dijon mustard with the white wine vinegar, then slowly whisking in the sunflower oil until glossy and lightly thickened. Finely grate a little lemon zest into the sauce, then squeeze in a little lemon juice to taste.
- Arrange the gravlax on a platter with the rye bread and lemon cut into wedges. Spoon the mustard sauce into a small bowl and scatter over the reserved dill to finish.
Recipe notes
Tips
- For the cleanest slices, chill the cured salmon well and use a long, sharp knife, wiping the blade between cuts.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use previously frozen salmon intended for raw consumption and keep it properly chilled.
Substitutions
- Replace white wine vinegar with apple cider vinegar for a slightly fruitier mustard sauce.
- Replace sunflower oil with extra-virgin olive oil for a more robust, peppery sauce.
Storage
- Refrigerate up to 3 days
- Keep the gravlax tightly covered in the fridge and slice as needed for the best texture. Freeze unsliced gravlax well wrapped for up to 1 month; defrost overnight in the fridge and pat dry before slicing.
