Gemista (Greek Stuffed Peppers and Tomatoes with Herby Rice)
Why this recipe works
- Layered flavour: Softened onion, garlic, tomato pulp, fresh herbs and olive oil give the rice depth before it goes into the vegetables.
- Rice finishes in the vegetables: Part-cooking the rice first lets it absorb the roasting juices without turning mushy.
- Flexible serving: Gemista holds well warm or at room temperature, making it useful for relaxed meals, packed lunches or make-ahead dinners.

Timing notes
- Most of the time is hands-off: The active work is mainly preparing the vegetables and starting the rice filling; the longer oven time finishes the dish gently.
- Rest before serving: A short rest helps the rice settle and absorb more of the olive oil and vegetable juices.
- Good warm or room temperature: If serving later, let the gemista cool in the baking dish so the filling stays moist.
Ingredient notes
- Choose sturdy vegetables: Firm peppers and ripe-but-firm tomatoes hold their shape better during baking and are easier to fill.
- Use fresh herbs where possible: Parsley and mint bring the clean, green flavour that defines the filling; dried herbs will taste flatter here.
- Olive oil matters: Extra virgin olive oil is part of the flavour of the dish, not just a cooking fat, so use one you enjoy.
Authenticity notes
- Home-style Greek cooking: Gemista is typically a vegetable-led baked dish, served with its pan juices rather than a separate sauce.
- Peppers, tomatoes or both: Many versions use only one vegetable; baking peppers and tomatoes together gives a good balance of sweetness, acidity and savoury rice.
Make-ahead tips
- Make ahead: Cool completely, then refrigerate in a sealed container for up to 3 days.
- Reheat gently: Reheat in a 180°C (355°F) oven until piping hot, adding a splash of water to the dish if the rice looks dry.
- Freezer option: Freeze cooked portions for up to 2 months and thaw overnight in the fridge before reheating.

Instructions
- Heat the oven to 190°C (375°F). Cut the tops off the peppers and tomatoes, keeping the lids, then scoop out the seeds from the peppers and the pulp from the tomatoes into a bowl. Lightly season the insides of the vegetables with a pinch of the salt and pepper.
- Finely chop the onion and crush the garlic. Roughly chop the parsley and mint. Stir the tomato pulp to break it up, then set it aside for the filling.
- Warm 3 tbsp of the olive oil in a frying pan over medium heat, then cook the onion with a pinch of salt for 8 to 10 minutes until soft and sweet. Add the garlic and cook for 1 minute until fragrant. Stir in the rice and cook for 2 minutes to coat the grains.
- Add the reserved tomato pulp to the pan, then pour in 300 ml water and bring to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until the rice has absorbed most of the liquid but is still undercooked. Take off the heat and stir in the parsley, mint, 1 tsp salt and the pepper.
- Arrange the peppers and tomatoes snugly in a baking dish. Spoon the rice mixture into each vegetable, filling to about 1 cm below the rim to allow for expansion, then set the lids back on. Drizzle the remaining olive oil over the vegetables and into the dish, then add 150 ml water to the base of the dish.
- Bake for 55 to 60 minutes until the vegetables are tender and lightly blistered, and the rice is cooked through. If the dish looks dry at any point, add a splash of water to the base. Rest for 10 minutes before serving.
- Finely grate a little lemon zest over the top, then squeeze over the lemon juice to taste. Serve warm or at room temperature, spooning some of the olive oil and juices from the dish over each portion.
Recipe notes
Tips
- Choose vegetables that can sit flat in the baking dish; if needed, trim a very thin slice from the base of each pepper or tomato so they stand upright.
- Do not fully cook the rice on the hob; it should be slightly underdone so it finishes cooking in the oven without turning mushy.
- If serving at room temperature, let the gemista cool in the baking dish so the rice stays moist from the pan juices.
Substitutions
- Replace Green pepper with Red pepper for a sweeter, milder result.
- Replace Fresh mint with Fresh parsley for a more classic, parsley-forward herb profile.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot, adding a splash of water to the dish if needed; or serve at room temperature. Freeze in portions for up to 2 months and thaw overnight in the fridge before reheating.
