Greek Lentil Grain Bowl
Why this recipe works
- Bright, balanced dressing: Lemon juice cuts through the olive oil and feta, keeping the bowl fresh rather than heavy.
- Good texture contrast: Firm lentils, fluffy bulgur, crisp cucumber and crumbly feta give each spoonful structure and variety.
- Ideal for lunch prep: The lentils and grains hold well in the fridge, making the bowl practical for packed lunches over several days.

Ingredient notes
- Use lentils that hold their shape: Green lentils are a good choice here because they become tender without collapsing into the salad.
- Choose ripe tomatoes: Sweet, ripe tomatoes help balance the sharp lemon dressing and salty feta.
- Season after adding feta: Feta brings noticeable saltiness, so taste the finished bowl before adjusting the seasoning.
Texture tips
- Drain thoroughly: Let both the lentils and bulgur drain very well so the dressing stays bright rather than diluted.
- Keep the lentils intact: Simmer the lentils only until tender; overcooked lentils can turn soft and muddy the texture of the bowl.
- Cool before adding feta: Let the lentils lose some heat before mixing in the feta so it stays crumbly rather than melting into the dressing.
Make-ahead tips
- Make ahead for lunches: The dressed lentils, bulgur and vegetables can be stored in a sealed container in the fridge for up to 3 days.
- Keep feta separate: For the freshest texture, add the feta just before serving rather than storing it mixed through the bowl.
- Refresh before serving: After chilling, loosen the bowl with a small splash of olive oil or lemon juice if it tastes muted.
Dietary alternatives
- Make it gluten-free: Replace the bulgur with quinoa, which gives a similar grain-bowl feel without gluten.
- Make it vegan: Use a plant-based feta alternative or leave the feta out and add extra herbs for freshness.

Instructions
- Rinse the lentils, then tip into a saucepan and cover with plenty of water. Bring to the boil, then simmer for 18 to 22 minutes until tender but still holding their shape. Drain well in a colander and leave to cool slightly.
- Meanwhile, put the bulgur in a heatproof bowl and cover with just-boiled water. Leave for 12 to 15 minutes until tender, then drain very well and return to the bowl. Fluff with a fork and set aside.
- Finely grate the garlic into a large bowl, then add the juice of the lemon, the olive oil, the salt and the pepper. Whisk until emulsified and glossy. Taste and adjust with a little more salt if needed.
- Finely chop the red onion, dice the cucumber, and halve the tomatoes. Add them to the dressing and toss to coat. Leave for 5 minutes to lightly soften the onion.
- Add the drained lentils and bulgur to the bowl and toss gently until everything is evenly dressed. Crumble over the feta and roughly chop and scatter over the parsley. Serve straight away, or chill for a make-ahead lunch.
