Miso Butter Sweetcorn Bowl with Short-Grain Rice

A warm rice bowl like this is all about the comfort of glossy short-grain rice paired with a highly seasoned topping. Sweetcorn brings natural sweetness and a little pop, while butter and white miso turn it savoury, rounded and gently umami-rich without needing a long cook. Soy sauce, mirin and rice vinegar give the corn a light glaze with saltiness, sweetness and lift, making it satisfying but not heavy. Finished with spring onion, toasted nori and sesame seeds, it has the familiar Japanese-style combination of soft rice, sweet-savoury topping and crisp, aromatic garnishes — ideal for a quick vegetarian lunch or simple weeknight bowl.

Why this recipe works

  • Deep savoury flavour: White miso, soy sauce and nori build umami without needing a long simmer.
  • Balanced sweetness: Mirin enhances the corn’s natural sweetness, while rice vinegar keeps the butter and miso from feeling heavy.
  • Fast but satisfying: The topping cooks while the rice finishes steaming, making the bowl practical for a quick lunch or weeknight dinner.

Timing notes

  • Let the rice steam off the heat: Keeping the lid on after cooking helps short-grain rice finish evenly and become plump rather than wet.
  • Serve once assembled: Add the nori, spring onion and sesame just before serving so the garnish stays fresh and distinct.

Ingredient notes

  • Use white miso for balance: White miso gives the bowl a mellow savoury sweetness that works well with butter and corn.
  • Rinse the rice well: Rinsing removes excess surface starch, helping the grains cook up glossy and separate without losing their characteristic stickiness.
  • Finish with crisp nori: Nori has the best texture and aroma when added at the end rather than stirred into the hot corn.

Texture tips

  • Loosen the miso butter if needed: If the corn mixture looks tight, stir in a little water until the sauce turns glossy and coats the kernels.
  • Lower the heat for the miso: Miso can catch on the pan if cooked too fiercely, so reduce the heat once it goes in.

Make-ahead tips

  • Store rice and corn separately: Keeping the rice and topping apart helps the rice reheat more evenly and prevents the garnish from softening.
  • Reheat gently: Warm the rice with a splash of water until piping hot, then heat the corn gently in a pan before adding the fresh toppings.

  1. Rinse the short-grain rice in cold water until the water runs mostly clear. Tip into a saucepan, cover with fresh water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes to steam and finish.
  2. Thinly slice the spring onion. Tear the nori sheets into small pieces or snip them into strips.
  3. Melt the unsalted butter in a large frying pan over medium heat. Add the sweet corn kernels and cook for 4 to 5 minutes, stirring, until hot and starting to take on a little colour.
  4. Lower the heat and stir in the white miso until it melts into the butter and coats the corn. Add the light soy sauce, mirin and rice vinegar, then cook for 1 minute until glossy and lightly reduced.
  5. Divide the rice between two bowls and spoon the miso butter corn over the top. Finish with spring onion, nori and roasted sesame seeds, and serve straight away.

Recipe notes

Tips

  • Keep the heat low once the miso goes in so it dissolves smoothly without catching on the pan.
  • If the corn mixture looks a little tight, add 1 to 2 tbsp water and stir until it turns silky and coats the kernels.

Substitutions

  • Replace Mirin with dry white wine for a less sweet, more grown-up finish.
  • Replace Rice vinegar with white wine vinegar for a sharper tang.

Storage

  • Refrigerate up to 2 days
  • Cool and refrigerate the rice and corn separately if possible. Reheat the rice with a splash of water in the microwave until piping hot, and warm the corn gently in a frying pan; add the nori and spring onion just before serving.
