Chinese New Year Steamed Whole Fish with Ginger and Spring Onions

Steamed whole fish is a classic Chinese banquet and Lunar New Year centrepiece, valued for its clean flavour, elegant presentation and the way the fish is brought to the table intact. The technique is deliberately gentle: a delicate white fish such as sea bass is steamed just until opaque, then finished with ginger, spring onions, a light soy dressing and a final pour of hot oil to wake up the aromatics. The result is fresh, savoury and fragrant rather than heavy, with tender flakes of fish and seasoned juices to spoon over each portion. It is best served immediately, shared at the table, with care taken around the bones.

Why this recipe works

  • Gentle steaming: Steaming keeps the whole fish delicate and moist while preserving its clean, fresh flavour.
  • Aromatic finish: Hot oil poured over ginger and spring onion releases their fragrance directly into the soy dressing.
  • Balanced seasoning: Light soy, Shaoxing wine, sesame oil and a little sugar create a savoury dressing that seasons without overpowering the fish.

Timing notes

  • Serve straight after the hot oil: The aroma is strongest immediately after the oil hits the ginger and spring onion, so bring the fish to the table promptly.
  • Check early: Begin checking at the shorter steaming time; whole fish can go from just cooked to dry quite quickly.

Authenticity notes

  • Chinese New Year significance: A whole fish is commonly served at Chinese New Year as a symbol of abundance, with the intact presentation part of the occasion.
  • Hot oil finish: Pouring hot oil over fresh aromatics is a classic finishing step, giving the dish its characteristic fragrance and glossy sauce.

Ingredient notes

  • Choose the right fish: Pick a whole fish that fits comfortably on the steaming plate so it cooks evenly and stays intact when served.
  • Use fresh aromatics: Fresh ginger and spring onions are essential here; dried alternatives will not give the same bright, lifted aroma.
  • Keep the seasoning light: Light soy sauce suits the delicate fish better than darker, heavier soy sauces, which can dominate the dish.

Serving ideas

  • Serve with steamed rice: Plain steamed rice is ideal for absorbing the soy dressing and aromatic juices.
  • Add simple greens: Pair with lightly cooked greens such as pak choi, choy sum or tenderstem broccoli to keep the meal balanced.

  1. Pat the sea bass dry, then make 3 shallow diagonal slashes on each side. Season all over with the fine sea salt and white pepper, then drizzle over the Shaoxing Cooking Wine and rub it into the slashes and cavity.
  2. Peel the ginger root and cut half into fine matchsticks; slice the rest into thin coins. Trim the spring onion, then cut 2 into 5 cm lengths and finely shred the remaining spring onion for topping.
  3. Set up a steamer over simmering water. Lay the ginger coins and the 5 cm spring onion lengths on a heatproof plate, sit the fish on top, then steam for 10 to 14 minutes until the flesh turns opaque and flakes easily at the thickest part.
  4. While the fish steams, warm the light soy sauce with the caster sugar in a small saucepan over low heat just until the sugar dissolves. Stir in the sesame oil, then take off the heat.
  5. Carefully lift the plate from the steamer and pour off any liquid that has collected on the plate. Scatter the ginger matchsticks and shredded spring onion over the fish, then spoon the soy dressing around and over it.
  6. Heat the rapeseed oil in a small frying pan over medium-high heat until shimmering. Immediately pour the hot oil over the ginger and spring onion to release their aroma, then serve the fish whole at the table.

Recipe notes

Tips

  • Choose a fish that fits comfortably in your steamer so it cooks evenly and stays intact for serving.
  • Do not oversteam: start checking at 10 minutes, and stop as soon as the thickest part flakes and the juices run clear.
  • If serving vulnerable groups, ensure the fish is cooked through and piping hot, and take extra care to remove all bones before eating.

Substitutions

  • Replace Sea bass with Sea bream for a similar delicate texture and steaming time.
  • Replace Rapeseed oil with Peanut oil for a more traditional aroma when pouring the hot oil over the aromatics.
  • Replace Caster sugar with Rock sugar, crushed, for a cleaner sweetness in the soy dressing.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in an airtight container. Reheat gently by steaming until piping hot, or flake the fish and warm it in a covered pan with a splash of water to prevent drying out.
