Fiesta Tostones (Twice-Fried Green Plantain with Lime and Garlic Dip)
Why this recipe works
- Classic twice-fried texture: The first fry softens the green plantain so it can be pressed, while the second fry creates the crisp, golden surface tostones are known for.
- Crisp edges, tender centre: Flattening the plantain increases surface area, giving each piece more contact with the hot oil and a better crunch.
- Bright dipping sauce: Lime cuts through the fried richness, while garlic and coriander add sharpness and freshness without overpowering the plantain.

Ingredient notes
- Choose very green plantains: Firm, unripe plantains give tostones their savoury flavour and starchy structure. Yellow or blackened plantains are sweeter and will not crisp in the same way.
- Dry before frying: Pat the cut plantain rounds dry before they go into the oil to reduce spitting and help the surface fry cleanly.
Texture tips
- Fry in small batches: Avoid crowding the pan so the oil stays hot enough for the second fry to crisp the flattened plantains properly.
- Season straight away: Salt the tostones as soon as they come out of the oil, then serve promptly so the surface stays crisp.
Serving ideas
- Serve with the lime-garlic dip: The sharp citrus and garlic sauce is a natural match for the salty fried plantain and keeps the dish lively.
- Pair with simple mains: Tostones work well alongside grilled fish, roast chicken, beans, rice or other savoury Latin American-style dishes.
- Finish with herbs: A little fresh coriander or parsley adds colour and a fresh contrast to the fried plantain.
Make-ahead tips
- Best served fresh: Tostones have their best texture shortly after the second fry, when the edges are crisp and the centres are still tender.
- Store sauce and tostones apart: If storing leftovers, keep the tostones and dipping sauce in separate airtight containers so the sauce does not soften the plantain.
- Re-crisp in the oven: Reheat refrigerated tostones on a baking tray at 200°C (390°F) until hot and crisp, then serve with the stirred dipping sauce.

Lime and garlic dipping sauce
Instructions
- Peel the plantains and cut them into rounds about 2 cm thick. Pat them dry so the oil does not spit.
- Pour the vegetable oil into a large frying pan to a depth of about 2–3 cm and heat over medium-high until shimmering. Fry the plantain rounds in batches for 3–4 minutes, turning once, until pale golden and just tender.
- Lift the plantains out with tongs and let them cool for 5 minutes until safe to handle. Press each round firmly to flatten to about 1 cm thick.
- Make the dipping sauce: finely grate or crush the garlic into a mixing bowl, then squeeze in the lime juice. Stir in the vegetable oil, fine sea salt, and finely chopped fresh coriander.
- Return the oil to medium-high heat and fry the flattened plantains for 2–3 minutes per side until deep golden and crisp. Drain briefly, then season immediately with the remaining fine sea salt.
- Serve the tostones hot with the lime and garlic dipping sauce on the side. If needed, keep them warm in a 120°C (250°F) oven for up to 15 minutes while you finish frying.
Recipe notes
Tips
- Choose very green, firm plantains for the best texture; ripe plantains will turn sweet and soft rather than crisp.
- For easier peeling, trim both ends, score the skin lengthways, then lift it off in strips.
- Fry in small batches so the oil temperature stays steady and the tostones crisp properly.
Substitutions
- Replace Fresh coriander with Fresh parsley for a milder, more familiar herb note.
- Replace Lime with Lemon for a slightly softer, less aromatic citrus dip.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate the tostones and sauce separately in airtight containers. Reheat the tostones on a baking tray at 200°C (390°F) for 8–10 minutes until hot and crisp; stir the sauce before serving.
