Moroccan Lamb Skewer Platter (Lamb Brochettes)
Why this recipe works
- Bold, simple seasoning: Garlic, cumin and paprika give the lamb a clear Moroccan-style savoury warmth without needing a long ingredient list.
- Fresh balance: Lemon juice in the marinade and wedges at the table cut through the richness of the lamb.
- Built for sharing: The skewers and tomato-onion salad work naturally as a platter, making the dish easy to serve for a relaxed dinner.

Timing notes
- Short marinade, big impact: Bite-sized lamb pieces only need a brief marinade to absorb the garlic, spice and lemon flavours.
- Rest before serving: A short rest after grilling helps the lamb stay juicy once it comes off the heat.
- Serve while hot: The skewers are at their best soon after grilling, while the edges are still lightly charred and the meat remains tender.
Texture tips
- Leave space on the skewers: A little room between the lamb pieces allows heat to circulate so the meat cooks evenly rather than steaming.
- Watch the final minutes: Lamb leg is lean, so take it off the grill while it still feels slightly springy and let the residual heat finish the cooking.
Ingredient notes
- Choosing the lamb: Boneless lamb leg gives neat, lean cubes for skewering; lamb shoulder is a richer alternative and a little more forgiving on the grill.
- Paprika choice: Sweet paprika keeps the flavour rounded and mild, while smoked paprika adds a deeper grilled character.
- Finish with lemon: A final squeeze of lemon at the table brightens the grilled meat and lifts the tomato and red onion salad.
Serving ideas
- Make it a fuller meal: Serve with warm flatbreads, couscous or a simple green salad alongside the tomato and red onion.
- Add a cooling sauce: A spoonful of plain yoghurt or a garlicky yoghurt sauce works well with the spiced lamb and lemon.

Lamb skewers
Tomato and red onion salad
Instructions
- Crush the garlic to a paste. In a mixing bowl, stir together the garlic, ground cumin, sweet paprika, olive oil, the juice of half the lemon, fine sea salt and black pepper.
- Cut the lamb into bite-sized cubes and add to the marinade, turning to coat well. Cover and leave at room temperature for 30 minutes while you prepare the salad.
- Dice the tomatoes and thinly slice the red onion, then roughly chop the parsley. Toss with the olive oil and fine sea salt, then set aside.
- Heat the grill to medium-high. Thread the lamb onto skewers, leaving a little space between pieces so they cook evenly.
- Grill the skewers for 8 to 10 minutes, turning every couple of minutes, until lightly charred and just cooked through but still juicy. Rest for 3 minutes.
- Cut the remaining lemon into wedges. Arrange the skewers on a platter with the tomato and red onion salad and lemon wedges for squeezing over.
Recipe notes
Tips
- If you are using wooden skewers, soak them in water for 20 minutes before threading to reduce scorching on the grill.
- For the juiciest result, avoid overcooking: pull the lamb when it is still slightly springy to the touch and let it finish as it rests.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, cook the lamb until fully done with no pink remaining.
Substitutions
- Replace Lamb leg boneless with Lamb shoulder for a slightly richer, more forgiving skewer.
- Replace Sweet paprika with Smoked paprika for a deeper, smokier flavour.
Storage
- Refrigerate up to 2 days
- Store leftover lamb and salad separately in airtight containers. Reheat the lamb in a 200°C (390°F) oven for 8 to 10 minutes until piping hot; add fresh lemon to serve.
