Pasta alla Boscaiola (Pappardelle with Mushrooms and Pancetta)
Why this recipe works
- Deep savoury base: Browning the pancetta first renders its fat, giving the mushrooms and tomatoes a richer, more rounded flavour.
- Good sauce cling: Pappardelle’s broad ribbons hold the chunky mushroom and pancetta sauce well, while pasta water helps everything turn glossy.
- Weeknight timing: The sauce cooks in the time it takes to boil the pasta, so the dish stays practical without losing depth.

Ingredient notes
- Choose mushrooms with flavour: Chestnut, portobello or mixed mushrooms give the sauce more depth than very mild white mushrooms.
- Let the pancetta brown: Proper browning builds the savoury base of the sauce; add the garlic only once the pancetta has rendered so it does not burn.
- Season after the cheese: Pancetta and parmesan both add salt, so taste once the pasta and cheese are combined before adjusting.
Common mistakes
- Avoid steaming the mushrooms: Give the mushrooms enough space and heat so their liquid evaporates and they begin to colour rather than collapse into the sauce.
- Do not leave the sauce watery: If the tomatoes look loose, simmer briefly before adding the pasta so the sauce coats the ribbons instead of pooling.
- Toss while the pasta is hot: Add the drained pappardelle straight to the pan and loosen with pasta water as needed for a glossy finish.
Authenticity notes
- Boscaiola style: Boscaiola means “woodsman-style” and is commonly associated with mushroom-based Italian pasta sauces.
- Tomato or cream versions: Some versions are tomato-based, while others use cream or a lighter white sauce; mushrooms remain the defining ingredient.
- Rustic rather than refined: The appeal is in a hearty, chunky sauce with clear mushroom and pancetta flavour rather than a smooth, delicate finish.
Make-ahead tips
- Best served straight away: Pappardelle has the best texture when tossed and eaten immediately, before the sauce tightens around the pasta.
- Reheat gently: Warm leftovers in a frying pan over medium-low heat with a splash of water, tossing gently until piping hot.
- Prep before cooking: Slice the mushrooms, grate the cheese and chop the parsley before starting, as the sauce comes together quickly.

Ingredients
Instructions
- Bring a large pot of well-salted water to the boil. Add the pappardelle and cook until al dente, according to the packet timings. Before draining, scoop out about 150 ml of the pasta water.
- Meanwhile, warm the olive oil in a large frying pan over a medium heat. Add the pancetta and cook for 4 to 6 minutes, stirring, until browned and the fat has rendered. Add the garlic and cook for 30 seconds until fragrant.
- Add the mushrooms and cook over a medium-high heat for 6 to 8 minutes until they release their liquid and start to turn golden. Tip in the canned tomatoes and bring to a gentle simmer. Cook for 5 minutes, crushing the tomatoes with a spoon, until the sauce looks slightly thickened.
- Drain the pasta and add it straight to the pan. Toss for 1 to 2 minutes, adding a splash of the reserved pasta water as needed to loosen and gloss the sauce. Stir through most of the parsley and most of the parmesan, then taste and adjust with a little more pasta water if needed.
- Serve hot, topped with the remaining parsley and parmesan. If the sauce tightens as it sits, loosen each portion with a spoonful of hot pasta water. Eat straight away for the best texture.
Recipe notes
Tips
- For the best flavour, let the pancetta brown properly before adding the garlic, and keep the heat moderate so the garlic does not catch.
- If the sauce looks watery after adding the tomatoes, simmer it a couple of minutes longer before tossing with the pasta so it clings to the ribbons.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the pancetta is cooked until piping hot throughout.
Substitutions
- Replace Pappardelle with Spaghetti for a more classic, twirlable finish.
- Replace Parmesan with Pecorino romano cheese for a sharper, saltier topping.
- Replace Fresh parsley with Fresh basil for a sweeter, more aromatic herb note.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat in a frying pan over a medium-low heat with a splash of water until piping hot, tossing gently to avoid breaking the pasta.
