Spaghetti alle Cozze (Spaghetti with Mussels)
Why this recipe works
- Briny, aromatic sauce: The mussels release their own liquor as they steam, creating a naturally savoury base with garlic, olive oil and white wine.
- Fast cooking: Mussels cook in minutes, so the sauce comes together while the spaghetti boils.
- Fresh finish: Lemon and parsley lift the richness of the olive oil and balance the salty depth of the mussels.

Ingredient notes
- Choose live, closed mussels: Use fresh mussels with shells that are closed, or that close when tapped. Discard any cracked shells before cooking.
- Use a dry white wine: A crisp, dry wine keeps the sauce clean and savoury rather than sweet.
- Clean just before cooking: Scrub the shells and remove beards shortly before steaming so the mussels stay in good condition.
Timing notes
- Serve straight away: This pasta is at its best as soon as it is tossed, while the sauce is glossy and the mussels are still hot.
- Work while the pasta boils: Clean the mussels and start the sauce as the spaghetti cooks so everything finishes at the same time.
Common mistakes
- Do not overcook the mussels: Once the shells open, they are ready. Prolonged cooking can make them tough and dry.
- Use enough heat for steaming: After adding the mussels, keep the pan lively and covered so they steam quickly and evenly.
- Do not keep leftovers for long: Seafood pasta is best eaten fresh. If storing leftovers, chill them quickly and reheat gently until piping hot.
Ingredient swaps
- Without white wine: Use water instead of wine, then add lemon at the end to bring back brightness.
- For less heat: Leave out the chilli flakes and finish with black pepper for a gentler version.

Instructions
- Bring a large pot of water to the boil and season it with the fine sea salt. Add the spaghetti and cook until just al dente.
- Meanwhile, scrub the mussels and pull off any beards; discard any that are cracked or do not close when tapped. Thinly slice the garlic, finely chop the parsley, and cut the lemon into wedges.
- Warm the extra virgin olive oil in a large frying pan over a medium heat. Add the garlic and chilli flakes and cook for 30 to 60 seconds until fragrant, without letting the garlic colour.
- Tip in the mussels and pour in the white wine. Cover and cook over a medium-high heat for 3 to 5 minutes, shaking the pan once or twice, until the mussels have opened.
- Uncover and discard any mussels that have not opened. Grind in the black pepper, then simmer the mussel liquor for 1 to 2 minutes to concentrate it slightly.
- Drain the spaghetti, reserving a small splash of the cooking water. Add the spaghetti to the pan and toss for 1 to 2 minutes until glossy and coated; loosen with a little reserved pasta water if needed.
- Take off the heat and toss through most of the fresh parsley. Serve immediately with lemon wedges and the remaining parsley scattered over the top.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat high once the mussels go in so they steam quickly and stay plump; overcooking makes them tough.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the mussels are thoroughly cooked and discard any that do not open.
Substitutions
- Replace white wine with the same amount of water and add a generous squeeze of lemon at the end to brighten the sauce.
- Replace chili flakes with black pepper only for a milder finish.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat gently in a frying pan with a splash of water until piping hot, and discard any mussels that were not eaten on the day of cooking.
