Vegan Pasta Primavera

Pasta primavera celebrates vegetables at their freshest: tender pasta tossed with quick-cooked seasonal produce rather than a heavy sauce. In this vegan version, penne carries crisp-tender courgette, asparagus, peas and softened cherry tomatoes, with garlic, extra virgin olive oil and lemon forming a light coating that feels bright rather than rich. Basil added at the end keeps the dish fragrant and green. It is the kind of pasta that works well for a fast dinner, especially when you want colour, freshness and enough structure for the vegetables to remain distinct.

Why this recipe works

  • Fast vegetable cooking: The vegetables are sautéed briefly so they stay colourful, fresh and crisp-tender.
  • Bright, light sauce: Lemon zest and juice lift the olive oil and garlic, keeping the pasta fresh rather than heavy.
  • Easy to adapt: The vegetable mix, pasta shape and herbs can be adjusted while keeping the same light primavera style.

Texture tips

  • Keep the vegetables bright: Cook the courgette and asparagus only until crisp-tender; they will continue softening slightly once tossed with the hot pasta.
  • Serve promptly: This pasta is at its best straight from the pan, while the tomatoes are just softened and the herbs are still fresh.

Ingredient notes

  • Choose firm, fresh vegetables: Firm courgette, snappy asparagus and ripe cherry tomatoes give the best contrast of sweetness, bite and juiciness.
  • Adjust the lemon at the end: Lemon varies in sharpness, so add it gradually and balance with salt and black pepper to taste.
  • Use fresh herbs if possible: Fresh basil gives the pasta its fragrant finish; flat-leaf parsley works well if you prefer a greener, more peppery note.

Make-ahead tips

  • Prep the vegetables in advance: The courgette, asparagus, tomatoes, garlic and lemon can be prepared ahead so the final cooking stays quick.
  • Reheat gently: Warm leftovers in a frying pan with a splash of water until piping hot, rather than adding more oil.
  • Best freshly cooked: The flavour holds well, but the vegetables have the best colour and bite when served straight away.

  1. Bring a large pot of water to the boil and season with the fine sea salt. Add the penne and cook until al dente, following the packet timing. Before draining, reserve about 150 ml of the pasta water.
  2. Meanwhile, slice the courgette into half-moons and trim the asparagus, then cut into bite-size lengths. Halve the cherry tomatoes and finely slice the garlic. Zest the lemon, then cut it in half for juicing.
  3. Heat the extra virgin olive oil in a large frying pan over a medium-high heat. Add the asparagus and courgette with a pinch of black pepper and cook for 3 to 4 minutes until bright and crisp-tender. Stir in the garlic and cook for 30 to 60 seconds until fragrant.
  4. Add the green peas and cherry tomatoes and cook for 2 minutes, just until the peas are hot and the tomatoes start to soften. Add the drained pasta, lemon zest and 2 to 3 tbsp lemon juice. Splash in a little reserved pasta water and toss until lightly glossy and coated.
  5. Tear in most of the fresh basil and toss again, then taste and adjust with more lemon juice, black pepper, or a pinch of fine sea salt if needed. Serve straight away while the vegetables are still vibrant. Finish with the remaining basil over the top.

Recipe notes

Tips

  • Keep the vegetables crisp-tender by cooking them over a medium-high heat and stirring often; they should stay bright and still have a little bite.
  • If the pasta looks dry, loosen it with a splash more reserved pasta water rather than extra oil so the sauce stays light.
  • If serving to anyone vulnerable, make sure the dish is served piping hot and cooled leftovers are chilled promptly.

Substitutions

  • Replace penne with fusilli for a similar shape that holds the light sauce well.
  • Replace fresh basil with fresh flat-leaf parsley for a greener, more peppery finish.
  • Replace lemon with lime for a sharper, slightly more aromatic citrus note.

Storage

  • Refrigerate up to 3 days
  • Cool, cover and refrigerate within 2 hours. Reheat in a frying pan over a medium heat with a splash of water until piping hot, or eat cold as a pasta salad.
