Slow-Cooked Baby Back Ribs with BBQ Sauce
Why this recipe works
- Smoky-sweet seasoning: Brown sugar, smoked paprika, garlic, pepper and cayenne give the ribs a rounded barbecue-style flavour before the sauce is added.
- Tangy balance: Apple cider vinegar in the foil packet cuts through the richness of the pork and keeps the finished glaze from tasting too sweet.
- Tender, sticky finish: A slow covered cook softens the meat, while the final uncovered roast turns the barbecue sauce glossy and lightly caramelised.

Ingredient notes
- Remove the membrane if possible: Taking off the thin membrane from the bone side helps the seasoning reach the meat and makes the ribs easier to slice cleanly.
- Use smoked paprika for depth: Smoked paprika gives the rub its barbecue-style character, especially useful when the ribs are cooked in the oven rather than over smoke.
- Keep the vinegar element: Apple cider vinegar adds gentle tang and steam inside the foil packet; white wine vinegar works if you prefer a sharper finish.
Timing notes
- Mostly hands-off cooking: The active work is short; most of the time is the low, covered oven cook that tenderises the ribs.
- Rest before slicing: A short rest helps the glaze settle and makes it easier to cut neatly between the bones.
- Best served hot and sticky: Serve soon after the final glaze has caramelised, while the edges are glossy and the sauce is still tacky.
Common mistakes
- Do not skip the foil packet: Cooking the ribs uncovered for the full time can dry them out; the sealed packet traps steam and keeps the meat tender.
- Watch the glaze closely: Barbecue sauce contains sugar and can catch quickly at 220°C (430°F), so keep an eye on the ribs during the final minutes.
- Check tenderness before glazing: The ribs should be very tender and pulling back from the bones before the sauce goes on, otherwise the glaze may finish before the meat is ready.
Make-ahead tips
- Mix the rub in advance: The dry spice mixture can be prepared ahead and kept covered until you are ready to season the ribs.
- Reheat covered first: Warm leftovers covered in a 180°C (355°F) oven until piping hot, then uncover and brush with more barbecue sauce for the final few minutes.
- Freezer-friendly leftovers: Cooked ribs can be frozen once completely cooled; defrost thoroughly before reheating until piping hot throughout.

Ingredients
Instructions
- Heat the oven to 150°C (300°F). In a bowl, mix the brown sugar, smoked paprika, ground garlic, fine sea salt, black pepper and cayenne pepper.
- Pat the ribs dry, then rub the spice mix all over both sides. Place the ribs on a large sheet of foil in a roasting tin, pour the apple cider vinegar around them, then seal tightly to make a packet.
- Slow-cook for 2 hours 30 minutes, until the ribs are very tender and the meat has pulled back from the bones. Carefully open the foil (watch for steam) and lift the ribs onto the roasting tin.
- Increase the oven to 220°C (430°F). Brush the ribs generously with barbecue sauce, then roast for 10 minutes until glossy and lightly caramelised.
- Brush with a little more barbecue sauce and roast for a further 5 minutes until sticky at the edges. Rest for 5 minutes, then slice between the bones and serve with the remaining sauce.
Recipe notes
Tips
- For the best texture, remove the thin membrane from the bone side of the ribs before seasoning; it helps the rub penetrate and makes slicing easier.
- If the sauce starts to darken too quickly at the higher heat, move the ribs down a shelf and keep a close eye for the final few minutes.
- If serving vulnerable groups, make sure the pork is cooked until piping hot throughout and the meat is tender with no pink near the bone.
Substitutions
- Replace apple cider vinegar with white wine vinegar for a slightly sharper tang.
- Replace cayenne pepper with hot paprika for a warmer, less direct heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat, covered, in a 180°C (355°F) oven until piping hot, then uncover and brush with barbecue sauce for the last 5 minutes; freeze for up to 2 months.
