Kotlety Kalafiorowe (Polish Cauliflower Patties)

In Polish-style everyday cooking, kotlety kalafiorowe turn tender cauliflower into small savoury cutlets with a soft, vegetable-rich centre and a golden pan-fried crust. The cooked cauliflower is mashed with sautéed onion, garlic, egg and breadcrumbs, giving the patties enough structure while keeping them light rather than dense. They are especially good served hot with sour cream stirred with fresh dill, which adds coolness and a clean herbal finish. Simple, economical and vegetarian, these cauliflower patties work well as a meat-free dinner, a warm snack or part of a larger meal with salad, potatoes or pickles.

Why this recipe works

  • Golden edges: Pan-frying gives the patties a lightly crisp exterior while keeping the cauliflower centre soft.
  • Savoury base: Softened onion and garlic add depth to the mild cauliflower without overpowering it.
  • Flexible serving: They can be served as a vegetarian main, a side dish, or a snack with a cool dill sour cream topping.

Texture tips

  • Steam-dry the cauliflower: Let the drained cauliflower sit briefly before mashing so excess moisture evaporates and the patties hold together more easily.
  • Let the mixture stand if loose: A short rest gives the breadcrumbs time to absorb moisture, making the mixture easier to shape.
  • Fry over steady medium heat: Moderate heat helps the patties brown evenly while warming through to the centre.

Make-ahead tips

  • Good for meal prep: Cooked patties keep well in the fridge and can be reheated in a frying pan until piping hot.
  • Freeze without the topping: Freeze the cooked patties plain, then add the dill sour cream after reheating for the best texture.
  • Refresh the crust: Reheating in a lightly oiled frying pan helps restore the golden exterior better than microwaving.

Serving ideas

  • Dill sour cream: The cool, tangy topping balances the fried patties and lifts the mild cauliflower flavour.
  • Serve with simple sides: Boiled potatoes, cucumber salad or a crisp green salad turn the patties into a fuller meal.
  • Finish with fresh herbs: A final scatter of dill adds freshness and makes the dish feel brighter.

  1. Cut the cauliflower into florets. Bring a large pot of salted water to the boil, add the cauliflower and cook for 10 to 12 minutes until very tender. Drain well in a colander and leave for 5 minutes to steam-dry.
  2. Meanwhile, finely chop the onion and crush the garlic. Heat 1 tbsp of the rapeseed oil in a frying pan over a medium heat, then cook the onion with a pinch of the salt for 6 to 8 minutes until soft and lightly golden. Stir in the garlic for 30 seconds, then scrape into a mixing bowl to cool slightly.
  3. Mash the cauliflower well, then add it to the bowl with the onion mixture. Stir in the breadcrumbs, black pepper and the remaining salt, then beat in the eggs until you have a thick mixture that holds its shape. If it feels loose, leave it to stand for 5 minutes so the breadcrumbs can absorb moisture.
  4. Shape the mixture into 10 to 12 small patties. Heat 2 tbsp of the rapeseed oil in the frying pan over a medium heat, then fry the patties for 3 to 4 minutes per side until deeply golden and hot throughout, adding more oil as needed. Transfer to a plate and keep warm while you cook the remaining batch.
  5. Finely chop the fresh dill and stir most of it into the sour cream, reserving a little for the top. Serve the patties hot with a generous spoonful of the dill sour cream and the reserved dill scattered over.

Recipe notes

Tips

  • Drain the cauliflower thoroughly and let it steam-dry before mashing; excess moisture makes the patties harder to shape.
  • Keep the heat at medium so the patties colour evenly and warm through without burning before the centre is hot.
  • If serving anyone vulnerable to food poisoning, use pasteurised eggs.

Substitutions

  • Replace Sour cream with Greek yogurt for a lighter topping.
  • Replace Rapeseed oil with Sunflower oil for frying.

Storage

  • Refrigerate up to 3 days
  • Cool the patties completely, then refrigerate in a sealed container. Reheat on a frying pan over a medium-low heat with a little Rapeseed oil for 3 to 4 minutes per side until piping hot, or in a 180°C (355°F) oven for 10 to 12 minutes. Freeze the cooked patties (without the Sour cream topping) for up to 2 months and reheat from thawed as above.
