Minestrone Verde Primaverile (Spring Green Minestrone Soup)
Why this recipe works
- Simple one-pot method: The vegetables, beans and pasta all cook in the same broth, building flavour while keeping the preparation straightforward.
- Gentle, layered flavour: Softened onion, celery and garlic form a savoury base before the green vegetables, beans and basil add freshness and depth.
- Light but satisfying: Cannellini beans and pastina make the soup filling without weighing down the clean spring vegetable character.

Timing notes
- Best served soon after cooking: The pastina will continue to absorb broth as it sits, so the soup has the best texture shortly after the pasta becomes tender.
- Prep first for an easy cook: Chop the onion, celery, garlic and courgette before heating the pot so each stage can move quickly without overcooking the vegetables.
Ingredient notes
- Choose small pasta: Pastina works well because it cooks quickly and disperses through the broth; orzo gives a similar effect with a slightly larger bite.
- Use fresh basil at the end: Adding basil right before serving preserves its aroma and keeps the finish bright rather than muted.
- Beans add body: Cannellini beans soften into the broth, giving the soup a fuller texture without needing cream or cheese.
Make-ahead tips
- Prepare the vegetables ahead: The onion, celery, garlic and courgette can be chopped in advance and kept refrigerated until you are ready to cook.
- Loosen when reheating: If the soup thickens in the fridge, add a splash of water or vegetable stock and warm gently until piping hot.
Authenticity notes
- A flexible home-style minestrone: Minestrone is typically adaptable and seasonal; this verde version keeps the focus on green vegetables, beans and a light broth.
- Pasta shapes can vary: Small pasta is common in minestrone, but the exact shape can change depending on what is available and how hearty you want the soup to feel.

Ingredients
Instructions
- Finely chop the onion and celery. Thinly slice the garlic. Cut the courgette into small dice so it cooks quickly.
- Warm 1 tbsp of the olive oil in a large pot over a medium heat. Add the onion and celery with a pinch of the salt and cook for 6 to 8 minutes until softened but not coloured. Stir in the garlic for 30 seconds until fragrant.
- Add the courgette, remaining salt and the black pepper, and cook for 3 to 4 minutes, stirring, until the courgette starts to turn glossy. Pour in the vegetable stock and bring to a gentle simmer. Simmer for 8 minutes.
- Stir in the cannellini beans and green peas and return to a steady simmer. Add the pastina and cook for 6 to 8 minutes, stirring occasionally, until the pasta is tender. If it looks too thick, add a splash of water from the kettle and keep it at a gentle simmer.
- Add the spinach and cook for 1 to 2 minutes until just wilted. Tear in most of the basil and taste, adjusting with a little more salt and pepper if needed. Ladle into bowls and finish with the remaining 1 tbsp olive oil and the last of the basil.
Recipe notes
Tips
- Keep the soup at a gentle simmer once the pasta goes in, and stir a couple of times so the pastina does not catch on the base of the pot.
- For a brighter basil finish, tear the leaves rather than chopping them, and add most of them right at the end.
- If serving anyone who is vulnerable, make sure the soup is piping hot all the way through before serving.
Substitutions
- Replace Pastina with Orzo for a similar small-pasta texture; cook until just tender.
- Replace Spinach with Baby spinach for a softer, more delicate finish.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container. The pastina will continue to absorb liquid, so loosen with a splash of water or vegetable stock when reheating and warm gently until piping hot.
