Vegan Black Bean and Plantain Bowl with Lime Salsa

A vegan black bean and plantain bowl brings the structure of a satisfying rice bowl together with flavours often associated with Latin American cooking: earthy beans, sweet ripe plantain, lime, coriander and gentle chilli heat. The beans are simmered until saucy with onion, garlic and cumin, so they coat the rice rather than sitting dry on top. Pan-fried yellow plantain adds caramelised edges and a soft, almost creamy centre, while tomato-lime salsa keeps the bowl fresh and bright. Avocado rounds everything out with richness, making it a practical 30-minute dinner that feels complete without needing extra sides.

Why this recipe works

  • Layered textures: Fluffy rice, saucy beans, creamy avocado and caramelised plantain give each bowl contrast without extra complexity.
  • Bright finish: Lime and tomato salsa lift the earthy beans and sweet plantain, keeping the bowl fresh rather than heavy.
  • Fast, practical cooking: Canned black beans and a simple stovetop method make this a satisfying dinner with minimal waiting time.
  • Easy to adjust: The heat, lime and bean consistency can all be adjusted at the end, making the bowl flexible for different tastes.

Get the most out of this recipe

Adjust the heat

  • For a gentler bowl: Reduce the chilli flakes or leave them out of the beans, then let people add chilli at the table.
  • For more heat: Add extra chilli flakes with the cumin so the heat infuses the beans as they simmer.
  • Keep it balanced: Use extra lime juice or avocado to soften the heat without making the bowl taste flat.

Ingredient notes

  • Choose the right plantain: A yellow plantain with a few black spots gives the best balance of sweetness and structure for pan-frying.
  • Use firm ripe tomatoes: A tomato that is ripe but still firm will release enough juice for the salsa without turning watery.
  • Keep the bean liquid: Using the liquid from the canned black beans helps create a saucy topping that thickens as it simmers.

Texture tips

  • Caramelise the plantain: Cook the plantain in a single layer and give it time to turn golden before flipping.
  • Thicken the beans: Mash a few beans against the side of the pan if you want a richer, more cohesive topping.
  • Assemble just before serving: Add the salsa and avocado at the end so the rice stays fluffy and the toppings stay fresh.

Make-ahead tips

  • Store toppings separately: Keep the salsa and avocado separate from the rice and beans so they stay bright and fresh.
  • Reheat gently: Warm the rice and beans with a splash of water until piping hot, then add the fresh toppings after reheating.
  • Fry plantain fresh if possible: Plantain has the best texture straight from the pan, though leftovers can be refreshed briefly in a hot frying pan.

  1. Rinse the rice until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on low for 12 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
  2. Meanwhile, dice the tomato and finely chop most of the fresh coriander, reserving a little for serving. In a mixing bowl, toss the tomato with the juice of half the lime and a pinch of the fine sea salt. Set aside to get juicy while you cook the rest.
  3. Peel the plantain and slice it on a slight diagonal into about 1 cm pieces. Finely chop the yellow onion and crush the garlic. Cut the avocado into slices and squeeze over a little of the remaining lime juice to keep it bright.
  4. Heat 1 tbsp of the olive oil in a large frying pan over medium heat. Add the plantain in a single layer and cook for 3 to 4 minutes per side until golden and caramelised, then transfer to a plate. Sprinkle with a pinch of the fine sea salt.
  5. Add the remaining 1 tbsp olive oil to the same pan and cook the onion for 4 minutes until softened. Stir in the garlic, ground cumin and chili flakes and cook for 30 seconds until fragrant. Add the canned black beans (including their liquid) and simmer for 4 to 5 minutes until thickened; season with the remaining fine sea salt and a squeeze of lime to taste.
  6. Divide the rice between two bowls and spoon over the spiced beans. Top with the plantain, avocado and the tomato salsa, then finish with the reserved coriander and any extra lime juice. Serve straight away while everything is warm.

Recipe notes

Tips

  • If your plantain is very ripe and browns quickly, lower the heat slightly and give it a little more time so it caramelises without burning.
  • For a looser bean topping, add a splash of water while simmering; for a thicker, mash a few beans against the side of the pan.
  • If serving to young children or anyone sensitive to heat, reduce the chili flakes and let people add more at the table.

Substitutions

  • Replace the chili flakes with half the amount for a gentler heat, or increase to 1 tsp for a spicier bowl.
  • Replace the ground cumin with 0.5 tsp for a milder, less earthy flavour.
  • Replace half the tomato with extra avocado for a creamier bowl.

Storage

  • Refrigerate up to 3 days
  • Store rice and beans together in an airtight container; keep the tomato salsa and avocado separate. Reheat the rice and beans in a saucepan with a splash of water over low heat until piping hot, then top with the salsa, avocado and coriander. Plantain is best freshly fried but can be reheated in a hot frying pan for 1 to 2 minutes per side.
