Egg Curry with Basmati Rice
Why this recipe works
- Layered spice base: Cooking the onion, chilli, garlic, ginger and ground spices before adding the tomatoes builds a rounded, aromatic curry base.
- Balanced tomato gravy: Ripe tomatoes bring brightness to the sauce, while simmering reduces them into a thicker, more savoury gravy.
- Built for rice: The eggs make the curry filling, and the loosened tomato gravy gives the basmati rice plenty of sauce to absorb.

Adjust the heat
- For a gentler curry: Remove the chilli seeds, or use less chilli, to keep the warmth aromatic rather than sharp.
- For more heat: Keep the chilli seeds in, or add a little extra fresh chilli with the garlic and ginger.
- Keep the spices rounded: Let the tomato gravy reduce properly before adding water; a thicker base helps the chilli taste integrated rather than raw.
Ingredient notes
- Use ripe tomatoes if possible: Ripe tomatoes grate down easily and give the curry a fresher, more naturally sweet sauce.
- Add garam masala late: Stirring garam masala in at the end preserves its warmer, more fragrant notes.
- Peel the eggs cleanly: Cooling the boiled eggs under cold running water makes them easier to peel before they go into the gravy.
Timing notes
- Cook the rice alongside the curry: Start the rice while the onion and tomato gravy are cooking so both components are ready at roughly the same time.
- Serve hot: The curry is best served as soon as the eggs are heated through and coated in the sauce.
Make-ahead tips
- Store rice separately: Keep the curry and rice in separate containers so the rice does not absorb too much sauce in the fridge.
- Reheat gently: Warm the curry in a saucepan with a splash of water until piping hot, taking care not to break up the eggs.

Instructions
- Put the eggs in a saucepan and cover with cold water. Bring to the boil, then simmer for 10 minutes. Drain, cool under cold running water, then peel and set aside.
- Rinse the basmati rice in cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and bring to the boil, then cover and cook on a very low heat for 10 minutes. Take off the heat and leave, covered, for 5 minutes to finish steaming.
- Meanwhile, finely chop the onion and chilli, then crush the garlic and finely grate the ginger. Heat the sunflower oil in a large frying pan over a medium heat. Cook the onion with a pinch of salt for 8 to 10 minutes until soft and lightly golden.
- Stir in the chilli, garlic and ginger and cook for 1 minute until fragrant. Add the ground turmeric, ground cumin and ground coriander and cook for 30 seconds, stirring so the spices do not catch. Grate the tomatoes into the pan (discarding the skins) and simmer for 8 to 10 minutes until thick and glossy.
- Add 200 ml water to loosen the gravy, then bring back to a gentle simmer. Add the peeled eggs and simmer for 5 minutes, turning them so they are well coated. Stir in the garam masala and most of the fresh coriander, then taste and adjust salt if needed.
- Fluff the rice with a fork and divide between bowls. Spoon over the egg curry and scatter with the remaining fresh coriander. Serve straight away while hot.

Tips
- For a richer flavour, let the tomato gravy simmer until the oil begins to separate at the edges before adding the water and eggs.
- If you like a stronger chilli heat, keep the seeds in the green chilli pepper; for a milder curry, remove them.
- For vulnerable groups, use eggs with the British Lion mark or another trusted food safety standard, and ensure they are fully hard-boiled.
Substitutions
- Replace the sunflower oil with olive oil for a fruitier finish.
- Replace the tomato with canned chopped tomatoes for convenience; simmer a little longer to reduce the sauce.
Storage
- Refrigerate up to 2 days
- Cool the curry quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot; store rice separately and reheat until piping hot.
