Pescado en Achiote (Baked Fish with Annatto Paste)

In pescado en achiote, mild white fish is coated with a citrusy annatto marinade that gives the dish its vivid red-orange colour and gently earthy flavour. This Mexican-style version turns it into a practical traybake: red onion and sweet pepper roast first, then the fish is added so it stays tender, moist and flaky. Orange juice, lime and garlic keep the marinade bright rather than heavy, while the vegetables absorb the savoury tray juices. Served with warm corn tortillas and fresh coriander, it works as an easy dinner with enough freshness and colour to feel generous at the table.

Why this recipe works

  • Citrus and achiote depth: Orange, lime, garlic and annatto create a marinade that is bright, earthy and savoury without needing a long marinating time.
  • Fast traybake method: The vegetables start roasting first, then the fish is added so everything finishes tender without overcooking the fillets.
  • Built for tortillas: Flaky fish, roasted vegetables and tray juices can be spooned straight into warm corn tortillas for an easy taco-style dinner.

Authenticity notes

  • Achiote colour and flavour: Annatto, or achiote, is valued in Mexican cooking for its vivid red colour and gently earthy, peppery flavour rather than for heat.
  • Citrus balance: The orange and lime mixture echoes the sharp-sweet citrus profile often used with achiote marinades, especially when sour orange is not available.

Texture tips

  • Keep the fish juicy: Check the fillets as soon as they turn opaque and flake easily; leaving them in the oven too long can make lean white fish dry.
  • Give the vegetables space: Spread the onion and pepper in a single layer before the fish goes on so they roast at the edges rather than steam.

Ingredient notes

  • Best fish to use: Choose a firm, mild white fish fillet that can hold together on the tray, such as cod, hake, haddock or similar.
  • Mix the marinade well: Whisk the annatto thoroughly with the citrus, garlic and oil so the colour and seasoning coat the fish evenly.

Timing notes

  • Serve straight away: The fish is best served as soon as it comes out of the oven, while the fillets are moist and the tortillas are still pliable.
  • Short active prep: Most of the work is mixing the achiote citrus coating and slicing the vegetables; the oven handles the rest.

  1. Heat the oven to 220°C (430°F). Finely grate the zest from the lime, then juice it; crush the garlic.
  2. In a bowl, whisk together the orange juice, lime zest and juice, garlic, ground annatto, olive oil, fine sea salt and black pepper until smooth. Slice the red onion into wedges and cut the red pepper into thick strips.
  3. Put the onion and pepper on a baking tray and toss with about half the annatto mixture. Spread out into a single layer and roast for 8 minutes, until starting to soften at the edges.
  4. Nestle the fish among the vegetables and spoon the remaining annatto mixture over the top. Bake for 8 to 12 minutes, until the fish is opaque and flakes easily and the vegetables are tender.
  5. Warm the corn tortillas in the oven for 2 minutes, or until pliable. Roughly chop the fresh coriander and scatter it over the fish and vegetables, then serve straight away with the tortillas.

Recipe notes

Tips

  • If your fish fillets are thick, start checking at 10 minutes and cook just until they flake easily to keep them juicy.
  • For extra flavour, spoon the tray juices over the tortillas before filling them.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until piping hot throughout.

Substitutions

  • Replace Orange juice with the same amount of Orange for a fresher, less sweet citrus flavour.
  • Replace Red pepper with Yellow pepper for a slightly sweeter roast vegetable.

Storage

  • Refrigerate up to 2 days
  • Cool, then refrigerate the fish and vegetables in an airtight container. Reheat on a baking tray at 180°C (355°F) for 8 to 10 minutes until piping hot, or flake the cold fish into warmed tortillas.
