Cajun Red Beans and Rice
Why this recipe works
- Smoky depth: Rendering the pork belly before browning the andouille builds a savoury base before the beans and stock go in.
- Naturally creamy: A long, gentle simmer softens the beans, and mashing a small portion back into the pot thickens the broth without cream.
- Classic aromatic base: Onion, celery and green pepper create the recognisable Cajun-style foundation for the dish.
- Hearty and satisfying: Beans, smoked meat and rice make a complete, filling dinner with rich flavour and a soft, spoonable texture.

Adjust the heat
- For less heat: Reduce the cayenne or use smoked paprika instead for warmth and colour without the same chilli kick.
- For more heat: Add extra cayenne gradually, or serve with hot sauce at the table so each portion can be adjusted.
- Season at the end: Smoked pork and sausage can be salty, so finish the seasoning after the beans are tender and the broth has concentrated.
Timing notes
- Plan for soaking: The dried kidney beans need an 8–12 hour soak before cooking, so start them the night before or early in the day.
- Mostly hands-off: The active chopping and browning are front-loaded; most of the time is spent letting the beans simmer until tender.
- Serve when creamy: The beans are ready when they are fully tender and the liquid has thickened into a spoonable sauce.
Make-ahead tips
- Keep beans and rice separate: Store the beans and rice in separate containers so the rice does not absorb too much liquid as it sits.
- Freezes well: The bean mixture can be frozen after cooking; cool it quickly first, then thaw and reheat gently.
- Loosen when reheating: Reheat the beans on the hob with a splash of water, stirring until piping hot and creamy again.
Common mistakes
- Do not undercook kidney beans: Kidney beans must be boiled and then simmered until fully tender; raw or undercooked kidney beans are not safe to eat.
- Avoid a hard boil: Once the pot has come to the boil, keep it at a gentle simmer so the beans soften evenly without breaking down too early.
- Watch the liquid level: If the pot looks dry before the beans are tender, add a little water and continue simmering rather than rushing the finish.

Ingredients
Instructions
- Put the dried kidney beans in a large bowl, cover with the water, and leave to soak for 8–12 hours. Drain and rinse well in a colander.
- Finely chop the yellow onion, celery and green pepper. Cut the smoked pork belly into small cubes and slice the andouille sausage.
- Heat the olive oil in a large pot over medium heat. Add the smoked pork belly and cook for 5–7 minutes until it renders some fat and starts to colour.
- Stir in the andouille sausage and cook for 3–4 minutes to lightly brown. Add the onion, celery and green pepper with the fine sea salt and cook for 8–10 minutes until softened.
- Add the garlic and cook for 1 minute until fragrant. Stir in the dried thyme, cayenne pepper and black pepper.
- Add the drained beans, chicken stock and bay leaves. Bring to the boil, then reduce to a gentle simmer and cook uncovered for 75–90 minutes, stirring now and then, until the beans are tender and the pot looks creamy.
- While the beans simmer, rinse the long-grain white rice until the water runs mostly clear. Cook the rice in a saucepan with enough water to cover by about 2 cm; bring to the boil, cover, then cook on low for 12 minutes and rest off the heat for 10 minutes.
- When the beans are tender, mash a ladleful against the side of the pot to thicken, then stir back through. Taste and adjust seasoning, then remove the bay leaves and serve the beans over the rice.
Recipe notes
Tips
- Keep the simmer gentle so the beans turn creamy without breaking up too early; stir more often towards the end to prevent sticking.
- If the pot looks dry before the beans are tender, add a splash of water and continue simmering until soft.
- Food safety: kidney beans must be boiled and then fully simmered until tender; do not slow-cook them from raw without a proper boil first.
Substitutions
- Replace Chicken stock with vegetable stock for a lighter, less meaty base.
- Replace Cayenne pepper with smoked paprika for warmth with less heat.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate beans and rice in separate airtight containers. Reheat the beans gently on the hob with a splash of water until piping hot; reheat rice in the microwave with a spoonful of water, covered, until steaming.
