Korean Spicy Chicken Poke Bowl
Why this recipe works
- Bold gochujang glaze: Gochujang and soy sauce create a sweet-savoury coating that clings to the browned chicken.
- Fresh crunch: Cool cucumber, julienned carrot and spring onion balance the warm rice and sticky chicken.
- Fast bowl assembly: The rice steams while the chicken and vegetables are prepared, keeping the full meal practical for a quick lunch or dinner.

Adjust the heat
- For less heat: Use a smaller amount of gochujang and balance the sauce with a little extra soy sauce or water.
- For more heat: Increase the gochujang slightly or finish the bowl with sliced fresh chilli.
- Keep it rounded: The fresh vegetables and sesame oil help soften the chilli warmth, so avoid skipping them if you want a balanced bowl.
Ingredient notes
- Gochujang: This Korean fermented chilli paste brings heat, sweetness and deep savoury flavour, so it does more than simply make the sauce spicy.
- Chicken thighs: Boneless, skinless thighs stay juicy during quick pan-frying and work well with the thick sauce.
- Sushi rice texture: Rinsing and resting the rice helps the grains stay tender and lightly sticky rather than heavy.
Common mistakes
- Crowding the chicken: Cook the chicken in a single layer so it browns properly before the sauce goes in.
- Adding the sauce too early: Gochujang can catch once it thickens, so add the sauce after the chicken is cooked and toss only briefly.
- Skipping the rice rest: Let the rice sit covered off the heat so the grains finish steaming and absorb moisture evenly.
Make-ahead tips
- Store for better texture: Keep the rice, chicken and raw vegetables in separate containers so the vegetables stay crisp.
- Reheat gently: Warm the chicken in a frying pan with a splash of water until piping hot, then add it to the bowl.
- Assemble just before eating: Add cucumber, carrot, spring onion and sesame seeds at the end for the freshest texture.

Ingredients
Instructions
- Rinse the sushi rice in cold water until the water runs mostly clear, then cook it in a saucepan with 240 ml water, covered, for 12 minutes. Rest off the heat for 5 minutes, then fluff and stir in the rice vinegar.
- In a bowl, whisk together the soy sauce and gochujang with 2 tbsp water to make a glossy sauce. Slice the chicken into bite-size pieces.
- Heat a large frying pan over medium-high heat and add the chicken in a single layer. Cook for 6 to 8 minutes, turning, until browned and cooked through.
- Pour the gochujang sauce into the pan and toss for 1 to 2 minutes until it coats the chicken and thickens slightly. Take off the heat and stir in the toasted sesame oil.
- Cut the cucumber into thin slices, julienne the carrot, and finely slice the spring onion. Divide the rice between two bowls and top with the spicy chicken, cucumber, carrot and spring onion.
- Finish with the sesame seeds and serve straight away. If you like, drizzle over any sauce left in the pan.
Recipe notes
Tips
- Keep the rice covered while it rests so the grains finish steaming and stay tender.
- Do not overcrowd the pan; if your pan is small, cook the chicken in two batches so it browns rather than stews.
- For a tidier bowl, keep the veg in separate piles so each bite has a bit of crunch alongside the chicken.
Substitutions
- Replace chicken thighs with chicken breast for a leaner bowl; reduce the cooking time slightly to avoid drying it out.
- Replace rice vinegar with white wine vinegar for a sharper, less sweet finish.
Storage
- Refrigerate up to 2 days
- Refrigerate the rice and chicken in separate airtight containers. Reheat the chicken until piping hot in a frying pan with a splash of water; serve the rice at room temperature or warmed, and add the fresh vegetables just before eating.
