Coconut Pandan Smoothie
Why this recipe works
- Ready fast: Everything is blended in stages, keeping the preparation simple and the total time very short.
- Naturally creamy: Coconut milk and ripe banana create a thick, smooth texture without dairy.
- Fragrant flavour: Pandan brings a grassy, vanilla-like aroma that balances the richness of coconut and the sweetness of palm sugar.

Ingredient notes
- Fresh or frozen pandan: Both work well, but frozen pandan blends more evenly if it softens briefly at room temperature first.
- Use ripe banana: A ripe banana gives the smoothie better body and natural sweetness, reducing the need for extra sugar.
- Adjust the palm sugar: Taste after blending and add a little more palm sugar only if the banana is not sweet enough.
Texture tips
- Blend pandan first: Blending the pandan leaves with coconut milk before adding banana and ice helps break them down more finely.
- For a thicker smoothie: Use very cold ingredients and blend just until smooth so the ice keeps the drink dense and chilled.
- Avoid gritty sugar: Blend again briefly if any palm sugar remains undissolved after tasting.
Timing notes
- Best served straight away: The smoothie is coldest, thickest and most aromatic immediately after blending.
- Soften frozen pandan slightly: Let frozen pandan sit briefly before blending so it breaks down more evenly in the coconut milk.
Ingredient swaps
- Alternative sweetener: Honey can replace palm sugar for a more floral sweetness, though the smoothie will no longer be vegan.

- Peel the banana and add it to the blender with the ice cubes. Blend for 30 to 60 seconds until completely smooth, thick and very cold.
- Taste and, if you want it sweeter, blend briefly to dissolve any remaining palm sugar. Pour into a glass and serve straight away.
Recipe notes
Tips
- For the smoothest texture, blend the pandan leaves with the coconut milk first, then add the banana and ice.
- If you are using frozen pandan leaves, let them sit at room temperature for a few minutes so they blend more evenly.
Substitutions
- Replace the palm sugar with honey for a different sweetness and a slightly floral note.
Storage
- Best served immediately. If needed, keep in the fridge for up to 2 hours, then re-blend briefly to recombine before serving.
