Brazo de Gitano (Swiss Roll with Cream)
Why this recipe works
- Soft sponge, cool cream: The airy whisked sponge stays light enough to roll, while the chilled cream gives clean slices and a smooth filling.
- Rolled while warm: Shaping the sponge before it cools helps it remember the curve, reducing the risk of cracking when filled.
- Simple ingredient list: Eggs, sugar, flour and cream create a classic roll without heavy frosting or complicated decoration.

Timing notes
- Cool before filling: Let the sponge cool fully in its rolled shape before adding the cream, otherwise the filling can soften and slide.
- Best after a short chill: A brief chill firms the cream and makes the spiral easier to slice neatly.
Texture tips
- Whisk to ribbon stage: The egg and sugar mixture should be pale, thick and able to leave a visible ribbon; this is what gives the sponge lift.
- Fold the flour gently: Use a light folding motion once the flour is added so the batter keeps as much air as possible.
- Avoid a dry sponge: Take the sponge out as soon as it springs back; an overbaked sheet is more likely to crack when rolled.
Ingredient notes
- Use room-temperature eggs: Room-temperature eggs whisk more readily and help create the volume needed for a light sponge.
- Keep the cream cold: Well-chilled double cream whips more reliably and holds its shape better inside the roll.
- Dust lightly before serving: A little icing sugar gives the roll a classic finish without making the filling overly sweet.
Common mistakes
- Waiting too long to roll: Roll the sponge while it is still warm; once cold, it becomes less flexible and more prone to splitting.
- Knocking out the air: Heavy mixing after the flour goes in can make the sponge dense rather than soft and pliable.
- Overwhipping the cream: Stop at soft peaks so the filling spreads smoothly and does not turn grainy.

Instructions
- Heat the oven to 200°C (390°F). Line a baking tray (about 30 x 40 cm) with baking paper, leaving a little overhang, and set a clean tea towel on the worktop.
- In a mixing bowl, whisk the eggs with the caster sugar and vanilla extract until very pale, thick, and the mixture falls in ribbons when you lift the whisk. This should take 5 to 8 minutes with an electric mixer.
- Sift in the plain flour and fold gently until no dry flour remains, keeping as much air in the batter as possible. Scrape into the lined tray and spread into an even, thin layer.
- Bake for 8 to 10 minutes until the sponge is lightly golden and springs back when pressed. Do not overbake or it will crack when rolled.
- While the sponge is hot, dust the surface lightly with a little of the icing sugar, then invert it onto the tea towel and peel off the baking paper. Starting from a short end, roll the sponge up with the towel inside and leave to cool seam-side down.
- Whip the double cream with the remaining icing sugar until it holds soft peaks. Keep it cool and stop whisking as soon as it looks smooth and spreadable.
- Carefully unroll the cooled sponge and spread the whipped cream evenly over the surface, leaving a 1 cm border at the far edge. Roll up again, this time without the towel, and place seam-side down.
- Chill the roll for 10 to 15 minutes to firm up the cream for neat slicing. Dust with a little extra icing sugar if you like, then slice and serve.
Recipe notes
Tips
- For the lightest sponge, whisk the eggs and caster sugar until the mixture is thick enough to leave a clear ribbon on the surface for a few seconds.
- Roll the sponge while it is still warm; this sets the shape and helps prevent cracking when you roll it again with the cream.
- If serving to vulnerable groups, use pasteurised eggs where available.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Caster sugar with Granulated sugar, but whisk for an extra minute or two to help it dissolve.
Storage
- Refrigerate up to 2 days
- Store covered in the fridge and slice just before serving for the neatest spirals. If the sponge softens, chill for 10 minutes before slicing.
