Torta de Maracuyá (Passion Fruit Tart)
Why this recipe works
- Bright, balanced filling: Passion fruit brings sharpness and aroma, balancing the richness of the cream and eggs.
- Crisp pastry base: Baking the pastry case before adding the custard helps keep the shell dry, structured, and lightly crisp.
- Smooth custard texture: A gentle bake at 160°C (320°F) sets the filling without making it dense or rubbery.

Timing notes
- Chill before slicing: The tart needs time in the fridge so the custard firms up and cuts cleanly.
- Serve chilled: Keep it cold until serving; extended time at room temperature will soften the pastry.
Texture tips
- Protect the base: Make sure the tart shell is dry and lightly golden before the filling goes in.
- For a cleaner custard: Letting the filling stand briefly and skimming off surface foam helps create a smoother finish.
Ingredient notes
- Choose ripe passion fruit: Ripe passion fruit gives the tart its strongest aroma and naturally sharp-sweet flavour.
- Strain the pulp: Pressing the pulp through a sieve extracts the juice while keeping the custard smooth and seed-free.
Common mistakes
- Do not overbake the custard: Remove the tart when the edges are set but the centre still has a slight wobble; it will firm as it cools.
- Handle the pastry gently: Overworking the dough can make the pastry tough rather than short and crisp.

Passion fruit custard
Instructions
- Heat the oven to 180°C (355°F). In a mixing bowl, combine the plain flour, icing sugar and fine sea salt, then rub in the unsalted butter until it looks like fine breadcrumbs. Beat 1 egg and mix it in to form a dough, bringing it together gently without overworking.
- Roll the dough out and line a 23 cm tart tin, pressing it neatly into the corners. Chill the lined tin for 20 minutes to help it hold its shape. Prick the base all over with a fork.
- Bake the tart case for 18 to 22 minutes until pale golden and dry to the touch. If the base puffs, press it down gently with the back of a spoon. Reduce the oven to 160°C (320°F).
- Cut the passion fruit in half and scoop the pulp into a sieve set over a bowl, pressing to extract as much juice as possible. You should have a generous amount of juice; discard the seeds. Set the juice aside.
- Whisk 3 eggs with the caster sugar until smooth, then whisk in the double cream, passion fruit juice and vanilla extract. Let the mixture stand for 2 minutes, then skim off any surface foam for a cleaner finish. Pour the custard into the warm tart case.
- Bake for 22 to 28 minutes until the edges are set and the centre still has a slight wobble. Cool at room temperature for 30 minutes. Chill for at least 45 minutes before slicing for the cleanest cuts.
Recipe notes
Tips
- For a crisp base, make sure the tart case looks dry and lightly golden before adding the custard, then pour the filling in while the case is still warm.
- For neat slices, chill the tart well, then wipe the knife with hot water and dry it between cuts.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are produced to be eaten lightly cooked and ensure the custard is fully set.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Caster sugar with Icing sugar for a slightly softer, less granular sweetness in the custard.
Storage
- Refrigerate up to 3 days
- Keep the tart covered in the fridge and serve chilled. For best texture, avoid leaving it at room temperature for long periods, as the pastry will soften.
