French Lentil Bowl with Fresh Herbs
Why this recipe works
- Bright, balanced dressing: Dijon mustard helps emulsify the red wine vinegar and olive oil, giving the lentils a sharp but rounded coating.
- Lentils that hold their shape: A gentle simmer keeps the green lentils intact, so the bowl stays distinct and pleasantly firm rather than mushy.
- Good served at room temperature: The lentils absorb the dressing as they stand, making the bowl practical for lunches, packed meals or preparing in advance.

Timing notes
- Serve after a short rest: Let the dressed lentils stand briefly before adding the herbs so they absorb the vinaigrette while still warm.
- Low active effort: Most of the time is hands-off simmering, with the dressing and herbs prepared while the lentils cook.
Ingredient notes
- Choose lentils that stay firm: French green lentils or similar small green lentils are ideal because they hold their shape better than red or yellow lentils.
- Use fresh herbs at the end: Parsley and chives are best folded in after cooking so their flavour stays bright and clean.
- Adjust the vinaigrette to taste: If the lentils taste flat after resting, a little extra vinegar or seasoning will sharpen the flavour.
Make-ahead tips
- Make ahead for lunches: Cook and dress the lentils in advance, then bring them towards room temperature before serving for the best flavour.
- Keep herbs fresh: For the brightest finish, store the chopped herbs separately and fold them through shortly before serving.
- Avoid reheating heavily: This bowl is best served at room temperature; if chilled, simply let it sit out briefly and loosen with a little olive oil if needed.
Serving ideas
- Serve with simple sides: Pair with crusty bread, roasted vegetables or a crisp green salad for a fuller meal.
- Add extra texture: To make it more substantial, finish with toasted nuts, seeds or crisp vegetables if they suit the meal.

Instructions
- Rinse the lentils in a colander. Finely chop the shallot, then put it in a saucepan with the lentils and bay leaves. Cover with plenty of cold water and bring to the boil.
- Reduce to a gentle simmer and cook for 18 to 22 minutes, until the lentils are just tender but still holding their shape. Stir once or twice and skim any foam if needed. Drain well, then discard the bay leaves.
- While the lentils cook, whisk the Dijon mustard, red wine vinegar, fine sea salt and black pepper in a mixing bowl. Slowly whisk in the extra virgin olive oil until glossy and emulsified. Taste and adjust with a pinch more salt or pepper if needed.
- Finely chop the fresh parsley and fresh chives. Tip the warm, drained lentils into the bowl with the dressing and toss until evenly coated. Leave for 5 minutes so the lentils absorb the dressing.
- Fold through the parsley and chives, then taste again and adjust seasoning. Serve at room temperature, spooned into bowls. If it looks a little dry, add a small drizzle of extra virgin olive oil from the measured amount before serving.

Tips
- Keep the lentils at a gentle simmer so they stay intact rather than splitting.
- Dress the lentils while they are still warm so they take on more flavour, then let them cool to room temperature before serving.
- If serving to anyone vulnerable, ensure the lentils are cooked until fully tender and serve promptly once cooled.
Substitutions
- Replace red wine vinegar with white-wine-vinegar for a slightly softer acidity.
- Replace Dijon mustard with whole-grain mustard for a more textured dressing.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Serve at room temperature, or take the chill off for 10 to 15 minutes; if needed, loosen with a small drizzle of extra virgin olive oil and re-season with fine sea salt and black pepper.
