Melanzane alla Parmigiana (Aubergine Parmigiana Bake)
Why this recipe works
- Classic layered method: Frying the aubergine before baking gives the slices structure and helps them hold their shape between the sauce and cheese.
- Simple, layered flavour: A gently simmered passata sauce, fresh basil, mozzarella and Parmesan create depth without overcomplicating the dish.
- Rich but balanced: Tender aubergine and melted cheese make it satisfying, while the tomato sauce keeps the bake from feeling too heavy.

Ingredient notes
- Choose firm aubergines: Firm, glossy aubergines are easier to slice evenly and hold their texture better during frying and baking.
- Drain the mozzarella: Letting the mozzarella sit briefly on kitchen paper reduces excess moisture, helping the finished bake set more neatly.
- Use a good passata: Because the sauce is deliberately simple, a smooth, well-flavoured passata makes a noticeable difference.
Timing notes
- Rest before slicing: The 15-minute rest is important: it allows the cheese and sauce to settle so the layers cut cleanly.
- Plan for stages: Most of the active work is in frying the aubergine; once assembled, the bake finishes largely hands-off in the oven.
Common mistakes
- Oil that is too cool: If the oil is not hot enough, the aubergine can absorb too much oil instead of frying quickly to a golden finish.
- Overcrowding the pan: Fry the aubergine in batches so the slices brown evenly rather than steaming against each other.
- Cutting too soon: Slicing immediately after baking can make the layers slide apart; allow the dish to rest first.
Make-ahead tips
- Good the next day: The flavours settle well after chilling, making leftovers especially useful for lunch or another dinner.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, uncovering near the end if the top needs refreshing.
- Freeze cooked portions: Cool completely, wrap portions well and thaw overnight in the fridge before reheating.

Instructions
- Make the sauce: warm the olive oil in a saucepan over medium heat, then add the garlic and cook for 30 to 60 seconds until fragrant but not coloured. Stir in the passata, salt and pepper, then simmer gently for 20 minutes until slightly thickened. Tear in most of the basil, reserving a few leaves for the top.
- Meanwhile, slice the aubergines into rounds about 1 cm thick and lay them in a colander. Sprinkle with a little of the salt from the measured amount, then leave to drain for 20 minutes. Pat dry well with kitchen paper.
- Put the flour in a shallow dish and beat the eggs in a second dish. Heat the sunflower oil in a large frying pan over medium-high heat until a small drop of egg sizzles immediately. Dip the aubergine slices in flour, then egg, and fry in batches for 2 to 3 minutes per side until deep golden; drain on kitchen paper.
- Heat the oven to 190°C (375°F). Slice the mozzarella and let it drain briefly on kitchen paper, then finely grate the parmesan. Spoon a thin layer of sauce into a baking dish, then add a layer of fried aubergine, a little mozzarella, a sprinkle of parmesan, and a few basil leaves; repeat, finishing with sauce, mozzarella and parmesan on top.
- Bake for 30 to 35 minutes until bubbling at the edges and golden on top. If the top colours too quickly, lower the oven to 180°C (355°F) for the final 10 minutes. Leave to rest for 15 minutes so the layers set, then serve.

Serving suggestions
This recipe pairs well with:
Tips
- For clean slices, let the parmigiana rest the full 15 minutes before cutting, and use a sharp knife wiped between cuts.
- Keep the oil at a steady medium-high heat so the aubergine fries quickly and stays light rather than soaking up oil.
- If serving anyone who is pregnant, elderly, or immunocompromised, use eggs with a recognised food safety mark and cook the dish until piping hot throughout.
Substitutions
- Replace Mozzarella with Fresh mozzarella for a softer, creamier finish; drain it well before layering.
- Replace Extra virgin olive oil with Sunflower oil in the sauce for a milder flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; cover loosely if the top is browning too fast. Freeze portions well wrapped for up to 2 months and thaw overnight in the fridge before reheating.
