Gratin van Prei en Ham (Leek and Ham Gratin)
Why this recipe works
- Layered savoury flavour: Softened leeks, cured ham, Dijon mustard, nutmeg and Gruyère build depth without making the dish complicated.
- Creamy, stable sauce: A flour-thickened milk sauce coats the leeks and ham evenly, then bakes into a bubbling gratin that holds together after resting.
- Golden comfort-food finish: The cheese topping browns in the oven while the leeks stay sweet and tender underneath.

Ingredient notes
- Wash leeks after slicing: Grit often sits between the layers, so slicing before washing helps remove it properly.
- Choose a good melting cheese: Gruyère gives a nutty, savoury finish and melts smoothly; Emmental makes a milder alternative.
- Use mustard for balance: Dijon cuts through the richness of the cheese sauce, while whole-grain mustard gives a softer bite and a little texture.
Common mistakes
- Browning the leeks: Cook the leeks gently until soft and reduced, not browned, so their flavour stays sweet rather than bitter.
- Rushing the sauce: Whisk the milk in gradually and let the sauce thicken gently; adding it too quickly can leave lumps.
- Serving too soon: A short rest after baking lets the sauce settle, making the gratin easier to spoon or slice neatly.
Make-ahead tips
- Prepare components ahead: The leeks can be softened and the sauce made in advance, then assembled and baked when needed.
- Reheat gently: Reheat leftovers in a 180°C (355°F) oven until piping hot, covering if the top is browning too quickly.
- Best baked fresh: The gratin is at its best on the day it is baked; freezing is not ideal because the dairy sauce may split.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Butter a baking dish with a little of the unsalted butter.
- Trim the leeks, slice them into 1 cm rounds, then wash well and drain. Melt 20 g of the butter in a large frying pan over medium heat, add the leeks with the fine sea salt and black pepper, and cook for 10 to 12 minutes until soft and reduced but not browned.
- Arrange half the softened leeks in the baking dish, then layer over the cured ham. Spoon over the remaining leeks and level the top.
- In a saucepan over medium heat, melt the remaining butter, then whisk in the plain flour and cook for 1 minute. Gradually whisk in the whole milk until smooth, then simmer gently for 3 to 5 minutes, whisking, until thick enough to coat the back of a spoon.
- Take the pan off the heat and whisk in the Dijon mustard, ground nutmeg, and about two-thirds of the Gruyère cheese until melted. Taste and adjust with a pinch more fine sea salt and black pepper if needed.
- Pour the cheese sauce over the leek and ham layers, then sprinkle over the remaining Gruyère cheese. Bake for 20 to 25 minutes until bubbling at the edges and golden on top.
- Rest for 5 to 10 minutes before serving so the sauce settles and slices neatly. Serve hot.
Recipe notes
Tips
- Wash leeks thoroughly after slicing, as grit often hides between the layers.
- Keep the sauce at a gentle simmer once the milk is added; a hard boil can make it catch on the base of the pan.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the gratin is baked until piping hot throughout.
Substitutions
- Replace Gruyère cheese with Emmental cheese for a milder, nuttier finish.
- Replace Dijon mustard with whole-grain mustard for a gentler heat and a little texture.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or microwave in short bursts, stirring the sauce where possible.
