Plum Duff (Steamed Fruit Pudding with Raisins and Sultanas)

Plum duff is an old-fashioned British steamed pudding, the kind of fruit-studded dessert served in slices rather than spooned from a dish. Despite the name, its character comes from dried fruit — here raisins and sultanas — folded through a gently spiced batter with brown sugar, cinnamon and nutmeg. Steaming in a pudding basin gives it a close, moist crumb and a rounded sweetness without the crust of a baked sponge. Served warm with custard, it is comforting, practical and well suited to make-ahead cooking, as the pudding can be cooled, stored and reheated without losing its dense, tender texture.

Why this recipe works

  • Gentle steaming: Steaming sets the pudding slowly, giving it a soft, moist crumb without drying the fruit.
  • Warm, rounded flavour: Brown sugar, cinnamon and nutmeg add depth around the raisins and sultanas without overpowering them.
  • Classic serving style: Warm slices with custard bring the contrast of dense fruit pudding and smooth, creamy sauce.

Timing notes

  • Serve warm: The pudding is best sliced while warm, with the custard heated separately just before serving.
  • Rest before turning out: A short rest helps the pudding settle, making it easier to release cleanly from the basin.

Texture tips

  • Keep the steam gentle: Maintain a gentle simmer rather than a rolling boil so water does not splash into the basin and weigh down the crumb.
  • Fold briefly: Mix the wet and dry ingredients only until no dry patches remain to keep the pudding tender.

Make-ahead tips

  • Make ahead: The pudding can be cooled, wrapped and refrigerated, then reheated in slices until piping hot.
  • Freeze without custard: Freeze the cooked pudding on its own, then defrost overnight in the fridge before reheating.
  • Reheat gently: Steam slices or microwave in short bursts so the crumb warms through without becoming tough.

Ingredient notes

  • Raisins and sultanas: Using both gives a mix of deeper caramel notes from raisins and lighter sweetness from sultanas.
  • Sugar choice: Light brown sugar gives a warmer flavour and slightly darker crumb than granulated sugar.

  1. Butter a 1 litre pudding basin well. Put a heatproof saucer or trivet in the bottom of a large pot, then set the basin in the pot to check it fits with the lid on; remove the basin.
  2. Fill the pot with enough water to come about halfway up the sides of the basin, then bring it to a gentle simmer. Keep a kettle of hot water ready so you can top up during steaming if needed.
  3. Melt the salted butter, then leave it to cool slightly so it is warm, not hot. In a mixing bowl, whisk together the plain flour, baking powder, light brown sugar, ground cinnamon and ground nutmeg.
  4. Stir in the raisins and sultanas until evenly coated in the dry mixture. In a jug, whisk the eggs with the whole milk, then whisk in the melted butter.
  5. Pour the wet mixture into the bowl and fold just until you have a thick, spoonable batter with no dry patches. Scrape into the prepared basin and smooth the top.
  6. Cover the basin tightly with a lid if it has one, or with a snug layer of foil. Lower into the simmering water, cover the pot with a lid, and steam gently for 80 minutes, topping up with hot water as needed to keep the level steady.
  7. Check the pudding is set by inserting a skewer into the centre; it should come out clean or with a few moist crumbs. Lift out carefully and rest for 5 minutes, then run a knife around the edge and turn out onto a plate.
  8. Warm the custard gently until hot but not boiling. Slice the plum duff and serve warm with the custard.

Recipe notes

Tips

  • Keep the water at a gentle simmer throughout; a hard boil can splash water into the basin and make the pudding heavy.
  • If serving vulnerable groups, use pasteurised eggs and ensure the pudding is fully steamed until set and piping hot in the centre.
  • For neat slices, let the pudding stand for 10 minutes after turning out, then cut with a warm knife.

Substitutions

  • Replace Sultana with Raisin for a slightly deeper, more caramel flavour.
  • Replace Whole milk with Low-fat milk for a lighter pudding texture.
  • Replace Light brown sugar with Granulated sugar for a cleaner sweetness and paler crumb.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then wrap well and refrigerate. Reheat slices in a steamer for 8–10 minutes or microwave in short bursts until piping hot; warm the custard separately. Freeze the pudding (without custard) for up to 2 months and defrost overnight in the fridge before reheating.
