Air Fryer Apple Pie

Apple pie is a familiar dessert built on tender fruit, warm spice and crisp, buttery pastry, usually served warm so the filling is soft and fragrant. This air fryer version keeps the character of a traditional small pie while using a deep cake pan and compact heat to give the shortcrust a deep golden finish. Briefly cooking the apples first helps them hold their shape and creates a glossy cinnamon-lemon syrup that thickens inside the pie rather than running out when sliced. It is well suited to smaller households, informal desserts and make-ahead serving, especially with cream, custard or a scoop of vanilla ice cream.

Why this recipe works

  • Golden shortcrust: Cold butter and chilled pastry help create a tender, flaky crust that browns well in the air fryer.
  • Balanced filling: Lemon brightens the sweet apple filling and keeps the cinnamon from tasting heavy.
  • Pre-cooked apples: Briefly cooking and thickening the apples before filling the pie gives a glossy set filling rather than a runny centre.

Timing notes

  • Chill the pastry properly: The pastry should feel firm before rolling. If it softens while lining the tin, chill it again before adding the filling.
  • Cool the filling before assembly: Let the apple mixture cool until just warm so it does not melt the pastry before cooking.
  • Rest before slicing: A 10-minute rest allows the thickened juices to settle, helping the pie slice more cleanly.

Texture tips

  • Avoid a wet base: Cook the apple juices with the cornflour until glossy and lightly thickened before filling the pastry case.
  • Keep apple pieces defined: Use firm apples and cook them only until just tender so they hold their shape during air frying.
  • Control browning: If the top colours too quickly, reduce the air fryer to 165°C (330°F) for the final stage of cooking.

Ingredient notes

  • Choose firm apples: Firm apples are best here because they soften without collapsing into purée.
  • Use lemon for balance: Lemon zest and juice sharpen the filling and help balance the sweetness of the apples and sugar.
  • Brown sugar variation: Light brown sugar can replace caster sugar for a deeper, more caramel-like flavour, though it will slightly darken the filling.

Make-ahead tips

  • Make components ahead: The pastry and apple filling can be prepared in advance and kept chilled separately before assembling.
  • Reheat gently: Reheat slices in the air fryer at 160°C (320°F) until piping hot to refresh the pastry.
  • Freeze cooked slices: Cool completely, wrap well, freeze in slices, then defrost in the fridge before reheating.

  1. Make the pastry: put the plain flour and fine sea salt in a bowl and rub in the cold unsalted butter until it looks like fine crumbs with a few larger flakes. Add 60 ml cold water a little at a time, mixing just until it comes together. Press into a disc, wrap and chill until firm.
  2. Peel, core and slice the apples. Put them in a saucepan with the caster sugar, the zest and juice of the lemon, and the ground cinnamon. Cook over a medium heat for 6 to 8 minutes until the apples are just tender and there is some syrup in the pan.
  3. Stir the cornflour with 2 tbsp cold water until smooth, then stir it into the hot apples. Cook for 1 minute until the juices turn glossy and lightly thickened. Tip into a bowl and leave to cool until just warm.
  4. Roll two thirds of the pastry to line a deep 18 cm cake pan, leaving a slight overhang. Spoon in the apple filling and level it. Roll out the remaining pastry for the lid, lay it over the top, then press and crimp to seal.
  5. Cut a small steam vent in the centre of the lid. Air fry at 175°C (345°F) for 28 to 35 minutes until deeply golden and the filling is bubbling through the vent. If the top colours too quickly, reduce the temperature to 165°C (330°F) for the last 10 minutes.
  6. Rest the pie for 10 minutes so the filling settles, then slice and serve warm. The filling should be thick and glossy, not runny.

Recipe notes

Tips

  • Chilling the pastry is key for a flaky shortcrust; if it starts to soften while lining the tin, chill it again for 10 minutes before filling.
  • Cook the apples only until just tender so they keep their shape after air frying.
  • Let the pie rest before slicing so the thickened juices do not flood out.

Substitutions

  • Replace Caster sugar with light-brown-sugar for a deeper caramel flavour in the filling.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate. Reheat slices in the air fryer at 160°C (320°F) for 6 to 8 minutes until piping hot. Freeze well-wrapped slices, defrost in the fridge overnight, then reheat as above.
