Rabanadas (Portuguese Christmas French Toast)
Why this recipe works
- Traditional method: Using day-old bread helps the slices absorb the sweetened milk while still holding their shape during frying.
- Fragrant flavour: Lemon zest in the milk adds freshness, while the cinnamon sugar coating gives the finished rabanadas their recognisable festive aroma.
- Custardy and golden: The milk soak softens the centre, and the egg coating sets in the pan to create lightly crisp, golden edges.

Authenticity notes
- Christmas tradition: Rabanadas are strongly associated with Portuguese Christmas tables, where they are often served alongside other sweet festive dishes.
- Home-style preparation: The dish is built from simple household ingredients, with stale bread turned into a rich, cinnamon-scented dessert.
Ingredient notes
- Choose sturdy bread: Slightly stale white bread is ideal because it soaks up the milk evenly without falling apart.
- Cool the milk slightly: Let the sweetened milk settle until warm rather than hot before soaking, which helps keep the bread intact.
Texture tips
- Drain before dipping: Lift each soaked slice carefully and let excess milk drip away before coating it in egg.
- Fry at a steady sizzle: Moderate, even heat helps the egg coating set and brown without smoking the oil or darkening the sugar too quickly.
Make-ahead tips
- Reheat gently: Reheat chilled rabanadas on a baking tray in a 180°C (355°F) oven until piping hot, then refresh with extra cinnamon sugar before serving.
- Best served warm: They are at their best soon after frying, when the coating is fresh and the centres are soft.

Ingredients
Instructions
- Put the whole milk and caster sugar in a saucepan. Finely zest the lemon into the pan, then add a pinch of fine sea salt and warm over a low heat, stirring, until the sugar dissolves and the milk is steaming but not boiling.
- Pour the warm milk into a shallow dish and leave to cool for 5 minutes so it is warm rather than hot. Lay the white bread slices in the milk and soak, turning once, until evenly saturated but still holding their shape.
- Meanwhile, whisk the eggs in a bowl until smooth. In a separate shallow dish, mix the ground cinnamon with the icing sugar.
- Heat the sunflower oil in a large frying pan over a medium heat until shimmering. Lift a soaked slice of bread, let the excess drip off, then dip it in the egg to coat and carefully lay it in the hot oil.
- Fry in batches for 2 to 3 minutes per side until deep golden and set through. Transfer to a plate and repeat with the remaining slices, adjusting the heat so the oil stays at a steady sizzle without smoking.
- While still warm, coat each rabanada in the cinnamon and icing sugar mixture. Serve warm, with any extra cinnamon sugar sprinkled over the top.
Recipe notes
Tips
- Use slightly stale white bread so it soaks up the milk without collapsing; if your bread is very fresh, leave the slices out for 30 minutes to dry a little.
- Keep the milk just below a simmer so it does not form a skin or scorch, and let it cool briefly before soaking to avoid tearing the bread.
- If serving vulnerable groups, use pasteurised eggs and fry until the egg coating is fully set and the centres are piping hot.
Substitutions
- Replace caster sugar with icing sugar in the milk for a slightly softer sweetness, then reduce the icing sugar in the coating to 10 g.
- Replace sunflower oil with olive oil for a fruitier finish, keeping the heat moderate to prevent bitterness.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray in a 180°C (355°F) oven for 8 to 10 minutes until piping hot; dust with a little extra icing sugar and ground cinnamon just before serving.
