Risotto ai Frutti di Mare (Italian Seafood Risotto)
Why this recipe works
- Classic risotto method: Toasting the Arborio rice and adding hot stock gradually helps release starch, creating a creamy texture without cream.
- Deep seafood flavour: Fish stock, white wine, onion and garlic give the rice a savoury base that supports the prawns, mussels and squid.
- Loose, glossy finish: A short rest off the heat lets the risotto settle into the flowing consistency expected from a well-made risotto.

Timing notes
- Serve straight away: Seafood risotto is at its best immediately after resting, while the rice is still loose and the seafood is tender.
- Rest briefly off the heat: The final short rest helps the rice relax and the remaining stock thicken slightly, giving the risotto its glossy finish.
Ingredient notes
- Choose fresh mussels carefully: Use mussels with intact shells that close when tapped, and discard any that remain closed after cooking.
- Use a well-flavoured fish stock: The rice absorbs the stock gradually, so its flavour has a direct impact on the finished risotto.
- Prepare the seafood before the rice is ready: Have the squid, prawns and mussels ready to add, as the final cooking stage moves quickly.
Common mistakes
- Adding stock too quickly: Wait until the pan looks nearly dry before adding the next ladle of stock; this helps the rice cook evenly and stay creamy.
- Overcooking the seafood: Add the squid, prawns and mussels near the end so they cook through without becoming tough or rubbery.
- Serving it too stiff: Risotto should be soft and flowing rather than dry; loosen it with a little hot stock if needed before serving.
Ingredient swaps
- Without white wine: Use fish stock in place of the wine for an alcohol-free version, adding it in the same stage of cooking.
- Alternative herb finish: Fresh basil can replace parsley for a softer, slightly sweeter herbal note.

Ingredients
Instructions
- Pour the fish stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. This makes it easier for the rice to cook evenly.
- Heat the olive oil in a large frying pan over a medium heat. Finely chop the onion, add it with a pinch of the salt, and cook for 8 to 10 minutes until soft and translucent.
- Crush the garlic and stir it in for 30 seconds until fragrant. Add the arborio rice and stir for 2 minutes until the grains look slightly translucent at the edges.
- Pour in the dry white wine and stir until it has mostly evaporated. Start adding the hot fish stock a ladle at a time, stirring often and only adding more once the pan looks nearly dry.
- While the risotto cooks, rinse the mussels and discard any that are cracked or do not close when tapped. Slice the squid into rings if needed, and keep the prawns ready to go.
- When the rice is almost tender (after about 18 minutes of stock additions), stir in the squid and cook for 2 minutes. Add the king prawns and mussels, cover, and cook for 4 to 6 minutes until the mussels have opened and the prawns are just opaque.
- Remove the lid and discard any mussels that have not opened. Stir in the black pepper and most of the parsley, then taste and adjust with the remaining salt if needed.
- Take the pan off the heat and let the risotto stand for 2 minutes so it relaxes into a creamy, flowing texture. Serve straight away, topped with the remaining parsley.
Recipe notes
Tips
- Keep the fish stock at a gentle simmer throughout; adding cold stock slows cooking and can make the risotto gluey.
- Stir often, but not constantly: you want enough movement to release starch for creaminess without breaking the grains.
- Seafood cooks quickly, so add the squid, prawns and mussels right at the end to keep everything tender. If serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are fully opaque and the mussels are piping hot and opened before eating.
Substitutions
- Replace Dry White Wine with an equal amount of Fish stock for an alcohol-free version.
- Replace Fresh parsley with Fresh basil for a softer, sweeter herbal finish.
Storage
- Refrigerate up to 1 days
- Cool quickly, then refrigerate in an airtight container. Reheat gently in a saucepan with a splash of fish stock, stirring until piping hot; avoid overcooking or the seafood can turn tough.
