Isterband with Dill Potatoes (Smoked Sausage with Potatoes)
Why this recipe works
- Simple ingredients: Fully cooked smoked sausage, potatoes, butter, dill and mustard keep the dish straightforward without sacrificing flavour.
- Tangy balance: Dijon mustard cuts through the richness of the sausage and buttered potatoes.
- Easy cooking method: Boiling the potatoes and gently browning the sausage are simple techniques that make this a reliable weeknight dinner.

Ingredient notes
- Use fully cooked sausage: The timing is based on smoked sausage that is already cooked. If using raw sausage, cook it more slowly and ensure it is piping hot throughout before serving.
- Choose fresh dill: Fresh dill gives the potatoes their clean, herbal finish. Dried dill will taste flatter and is best avoided here if fresh is available.
- Mustard matters: Dijon gives a smooth, sharp finish, while whole-grain mustard adds a more textured, traditional-style bite.
Texture tips
- Steam-dry the potatoes: After draining, return the potatoes to the hot pot briefly so excess moisture evaporates before adding butter and dill.
- Brown the sausage gently: Use medium heat and turn the sausage often so it warms through evenly while developing light colour on the outside.
Make-ahead tips
- Reheat gently: Warm leftovers in a frying pan with a little butter over medium-low heat, or use a 180°C (355°F) oven until piping hot.
- Best served hot: The potatoes are at their best just after tossing with butter and dill, while they are still glossy and fragrant.

Instructions
- Scrub the potatoes and cut any larger ones so they are a similar size. Put them in a large pot, cover with cold water, and add 1 tsp of the salt. Bring to the boil, then simmer for 15 to 20 minutes until a knife slides in easily.
- While the potatoes cook, warm a large frying pan over medium heat. Add half the butter, then add the smoked sausage and cook for 8 to 10 minutes, turning often, until heated through and lightly browned. If the pan looks dry, add a little more butter as needed.
- Drain the potatoes well and return them to the pot. Add the remaining butter, the remaining 1 tsp salt, and the black pepper, then toss gently until glossy. Finely chop the dill and fold most of it through, reserving a little for serving.
- Serve the sausages with the dill potatoes. Spoon the Dijon mustard alongside for dipping, and scatter over the reserved dill. Eat straight away while everything is hot.
Recipe notes
Tips
- If your smoked sausage is raw rather than fully cooked, cook it gently over low to medium heat for longer until piping hot throughout.
- For the best texture, drain the potatoes thoroughly, then let them steam dry in the pot for 1 minute before adding the butter and dill.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a more traditional, textured finish.
- Replace unsalted butter with salted butter, then reduce the fine sea salt to 1 tsp total.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate in a sealed container. Reheat the potatoes and sausage in a frying pan with a small knob of unsalted butter over medium-low heat until piping hot, or warm in a 180°C (355°F) oven for 10 to 15 minutes.
