Pepperkaker (Nordic Gingerbread Biscuits with Golden Syrup)
Why this recipe works
- Thin, crisp texture: Rolling the chilled dough very thinly helps the biscuits bake into a firm, snappy texture rather than a soft cookie.
- Warm spiced flavour: Ginger, cinnamon and cloves give the biscuits their recognisable pepperkaker character, balanced by caramel notes from the syrup and brown sugar.
- Easy to prepare ahead: The dough can be chilled or frozen before baking, making it practical for batch baking or spreading the work over several days.

Timing notes
- Chill until pliable: The dough should be cool and firm enough to roll cleanly, but not so hard that it cracks at the edges.
- Let them cool fully: The biscuits firm up as they cool, so move them to a rack after a short tray rest and wait until completely cool for the best snap.
- Best after cooling: Serve once the biscuits have fully set; warm pepperkaker will taste good but will not yet have their final crisp texture.
Texture tips
- Roll thinly: A thin, even sheet of dough is the key to crisp pepperkaker with clean edges and an audible snap.
- Store airtight: Once cool, keep the biscuits in an airtight container so they stay dry and crisp.
- Control soft dough: If the dough becomes sticky during rolling, chill it briefly before continuing so the biscuits hold their shape in the oven.
Ingredient notes
- Golden syrup: Golden syrup gives a rounded sweetness and helps create the caramelised flavour typical of this style of biscuit.
- Ground spices: Use fresh, fragrant ground spices for the clearest flavour; stale spices can make the biscuits taste flat.
- Room-temperature egg: A room-temperature egg blends more smoothly into the warm syrup mixture and helps the dough come together evenly.
Make-ahead tips
- Make the dough ahead: The dough can be made in advance and kept chilled, then allowed to soften slightly before rolling.
- Freeze unbaked dough: Wrap the dough well before freezing, then thaw it overnight in the fridge before rolling and baking.
- Bake in batches: Keep unused dough cool while each tray bakes so later batches roll neatly and spread less.

Ingredients
Instructions
- In a mixing bowl, whisk together the plain flour, ground ginger, ground cinnamon, ground cloves, bicarbonate of soda and fine sea salt until evenly combined.
- Put the unsalted butter, golden syrup and light brown sugar in a saucepan over low heat. Warm, stirring, until the butter has melted and the mixture is smooth, then take off the heat and leave to cool for 5 minutes.
- Whisk the egg into the warm syrup mixture until glossy. Pour into the dry ingredients and mix to a soft dough; it will be slightly sticky at first.
- Shape the dough into a flat disc, cover, and chill until firm enough to roll cleanly. Aim for a dough that feels cool and pliable rather than hard.
- Heat the oven to 180°C (355°F). Line baking trays with a baking mat.
- Roll the chilled dough thinly on a lightly floured surface, about 2 mm thick, turning it as you go to prevent sticking. Cut into shapes and transfer to the prepared trays, leaving a little space between biscuits.
- Bake for 7 to 9 minutes, rotating the trays halfway through, until the edges are crisp and the biscuits are lightly browned. Leave on the tray for 2 minutes, then move to a rack to cool completely so they crisp up.
- Repeat rolling and baking with the remaining dough, chilling it briefly if it starts to feel soft. Serve once fully cool for the best snap.
Recipe notes
Tips
- For thin, even biscuits, roll the dough between two baking mats and peel the top mat away before cutting.
- If the dough becomes sticky while rolling, chill it for 10 minutes, then continue; warm dough spreads more and bakes thicker.
- If you are serving these to young children, pregnant people, or anyone vulnerable, use a pasteurised egg where available.
Substitutions
- Replace Golden syrup with Honey for a slightly more floral sweetness and a darker bake.
- Replace Light brown sugar with Dark brown sugar for a deeper, more treacly flavour.
Storage
- Refrigerate up to 5 days
- Store baked biscuits in an airtight container at room temperature for up to 10 days. The dough keeps in the fridge for up to 5 days; let it sit at room temperature for 10 minutes before rolling. Freeze the dough (well wrapped) for up to 2 months, then thaw overnight in the fridge before rolling and baking.
