Gołąbki (Polish Cabbage Rolls with Pork and Rice)
Why this recipe works
- Hearty and satisfying: Pork, rice and cabbage create a filling dish with the soft, savoury character associated with classic comfort food.
- Simple, layered flavour: Softened onion, garlic, tomato passata and stock give the sauce depth without overpowering the cabbage and pork filling.
- Good for making ahead: The rolls hold well in their sauce, making them suitable for chilling, freezing and reheating gently.

Timing notes
- Allow time for assembly: Most of the hands-on work is in softening the cabbage leaves and rolling the filling; the final simmer is slower and largely hands-off.
- Rest before serving: A short rest off the heat helps the rolls settle, making them easier to lift from the pot without tearing.
Common mistakes
- Avoid a hard boil: Keep the sauce at a gentle simmer so the cabbage rolls stay intact and the tomato sauce does not catch on the base of the pot.
- Trim thick cabbage ribs: Shaving down the firm central rib makes each leaf easier to fold and prevents bulky, uneven rolls.
- Check the pork filling: The filling should be fully cooked and piping hot throughout before serving, especially when cooking for vulnerable diners.
Ingredient notes
- Choose a flexible cabbage: A white cabbage with large, pliable leaves makes rolling easier and gives the finished dish a neat shape.
- Parsley or dill: Fresh parsley keeps the flavour clean, while fresh dill gives a more recognisably Polish herb note in many home-style versions.
- Cook the rice just tender: Rice that is cooked but not mushy helps the filling hold together during the long simmer.
Make-ahead tips
- Assemble in advance: The rolls can be shaped ahead and kept covered in the fridge before simmering, making the final cooking stage more manageable.
- Freeze with sauce: Cooked gołąbki freeze best with plenty of sauce around them, which helps protect the cabbage and filling from drying out.
- Reheat gently: Warm in a covered saucepan over low heat, adding a little water if the sauce has thickened, until piping hot throughout.

Instructions
- Bring a large pot of water to the boil. Core the cabbage, then lower it into the water and cook for 8 to 12 minutes, turning once, until the outer leaves are pliable. Lift out, let it cool until you can handle it, then carefully peel off 10 to 12 large leaves.
- Cook the rice in boiling water for 8 to 10 minutes until just tender, then drain well and cool slightly. Finely chop the onion, mince the garlic, and finely chop the parsley. Set aside a little parsley for serving.
- Heat the sunflower oil in a saucepan over medium heat. Cook the onion for 6 to 8 minutes until soft and sweet, then stir in the garlic for 30 seconds until fragrant. Tip into a mixing bowl and let it cool for a couple of minutes.
- Add the minced pork, cooked rice, most of the parsley, 1 tsp of the fine sea salt, and the black pepper to the bowl. Mix thoroughly until evenly combined. Taste a tiny piece by frying a small pinch in the saucepan until cooked through, then adjust seasoning with the remaining salt if needed.
- Lay a cabbage leaf flat and trim any very thick part of the central rib so it folds easily. Place a portion of filling near the base, fold in the sides, then roll up snugly. Repeat with the remaining leaves and filling.
- Stir the tomato passata and vegetable stock together in a large pot and bring to a gentle simmer. Nestle the cabbage rolls seam-side down in the sauce in a single layer where possible. Cover and simmer very gently for 45 to 55 minutes, turning once halfway, until the cabbage is tender and the filling is cooked through.
- Rest the pot off the heat for 5 minutes so the rolls settle. Spoon the rolls into bowls or onto plates and ladle over plenty of sauce. Finish with the reserved parsley and serve hot.
Recipe notes
Tips
- Keep the simmer low and steady so the rolls stay intact and the sauce does not catch on the bottom.
- If the cabbage leaves are small, use two leaves overlapped to make one roll, or make a few smaller rolls and shorten the simmer slightly.
- Food safety: if serving vulnerable groups, ensure the pork filling is fully cooked and piping hot throughout before serving.
Substitutions
- Replace Sunflower oil with Olive oil for a slightly fruitier base.
- Replace Fresh parsley with Fresh dill for a more traditional herb note in some Polish households.
- Replace Vegetable stock with Chicken stock for a richer sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with plenty of sauce. Reheat gently in a covered saucepan over low heat, adding a splash of water if the sauce has thickened, until piping hot. Freeze portions with sauce for up to 2 months; defrost overnight in the fridge before reheating.
