Rosół (Polish Chicken Broth with Root Vegetables)
Why this recipe works
- Gentle simmering: Keeping the broth at a quiet simmer extracts flavour slowly while helping the liquid stay clear.
- Aromatic depth: Root vegetables, leek, bay, allspice and peppercorns give the broth a rounded savoury flavour without making it heavy.
- Easy to store: The strained broth keeps well in the fridge and freezes neatly in portions for quick future meals.

Authenticity notes
- Polish home-style broth: Rosół is valued for a clear, golden broth rather than a thick or heavily seasoned soup.
- Classic serving: Fine noodles are the most familiar accompaniment, added to bowls before the hot broth is ladled over.
Ingredient notes
- Root vegetables matter: Parsley root and celeriac give rosół its distinctive earthy sweetness; if unavailable, the broth will still work but taste softer and less traditional.
- Use whole spices: Whole allspice berries and peppercorns season the broth gently and are easy to strain out.
Common mistakes
- Avoid a rolling boil: Boiling breaks up proteins and fat into the liquid, making the broth cloudy rather than clear.
- Skim early: Foam is easiest to remove as the chicken first heats; leaving it too long can dull the clarity of the broth.
Make-ahead tips
- Make the broth in advance: Rosół is well suited to preparing ahead; cool it quickly, cover and refrigerate until needed.
- Reheat gently: Warm the broth until piping hot, but avoid a hard boil if you want to preserve its clear finish.
- Freeze in portions: Strained broth freezes well in usable portions and can be defrosted overnight in the fridge.
Equipment you'll need
Ingredients
Instructions
- Rinse the chicken and place it in a stockpot. Add the cold water and fine sea salt, then set over medium heat and bring just to a gentle simmer.
- As the broth warms, skim off any foam that rises to the surface. Keep the heat low so the broth barely trembles; a quiet simmer keeps it clear.
- Peel the carrots, parsley root and celeriac, then cut them into large chunks. Trim and wash the leek well, then cut into large pieces.
- Add the carrot, parsley root, celeriac and leek to the pot, then add the bay leaves, allspice berries and black peppercorns. Return to the gentlest simmer.
- Simmer very gently for 2 hours, skimming occasionally, until the broth is golden and the chicken is tender. Avoid boiling, which can make the broth cloudy.
- Lift out the chicken and vegetables, then strain the broth through a colander into a clean pot or bowl. Taste and adjust with a little more fine sea salt if needed, then serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- For the clearest rosół, keep the heat low so the surface only gently quivers, and skim foam early on.
- If you want a deeper colour, let the vegetables sit in the broth for 10 minutes off the heat before straining.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the broth is kept at a steady simmer and the chicken is cooked through before straining.
Substitutions
- Replace Parsley root with extra Carrot for a slightly sweeter broth.
- Replace Celeriac with extra Leek for a lighter, more delicate vegetable note.
Storage
- Refrigerate up to 4 days
- Cool the broth quickly, then refrigerate in a covered container. Reheat gently on the hob until piping hot; avoid a hard boil to keep it clear. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
