Modern Pierogi Bowl (Potato, Quark and Bacon)
Why this recipe works
- Pierogi flavour without the dough work: The potato, quark and onion combination gives the familiar richness of pierogi filling while keeping the method much faster.
- Creamy base, crisp topping: Smooth potato and quark are balanced by golden onions and crisp smoked pork belly for a more complete bowl.
- Built-in savoury depth: Rendering the pork belly first leaves flavourful fat in the pan, which helps the onions cook into a sweet, buttery topping.

Ingredient notes
- Choose a waxy-creamy potato: Yukon Gold potatoes mash smoothly while keeping enough body to hold the bowl together.
- Use pasteurised dairy when needed: Pasteurised quark and sour cream are the safer choice for pregnant people, young children, older adults and anyone immunocompromised.
- Quark gives a tangy finish: Quark keeps the mash creamy but lightly tangy; ricotta works as a milder, looser alternative.
Texture tips
- Steam-dry the potatoes: Return the drained potatoes to the hot pot briefly so excess moisture evaporates before mashing.
- Keep the pork belly separate: Add the pork belly just before serving so it stays crisp against the creamy potato base.
Make-ahead tips
- Store the parts separately: Keep the potato-quark base, onions and pork belly in separate airtight containers so the topping does not soften.
- Reheat gently: Warm the potato mixture and onions with a little water if needed, then re-crisp the pork belly in a dry pan.
Authenticity notes
- A deconstructed pierogi approach: The recipe keeps the recognisable potato, cheese and onion flavours of pierogi but serves them as a bowl rather than enclosed in dough.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 0.75 tsp of the fine sea salt. Bring to the boil, then simmer for 12 to 15 minutes until very tender.
- While the potatoes cook, cut the smoked pork belly into small lardons. Fry in a large frying pan over medium heat for 6 to 8 minutes, stirring, until the fat renders and the pieces are crisp. Lift out to a plate, leaving the fat in the pan.
- Peel and finely slice the onion. Add the butter to the pan and sauté the onion over medium-low heat for 8 to 10 minutes until soft and golden, seasoning with the remaining 0.5 tsp fine sea salt and the black pepper. Turn off the heat.
- Drain the potatoes well and return them to the hot pot for 1 minute to steam-dry. Mash until smooth, then stir in the quark cheese until creamy. Taste and adjust with a pinch more fine sea salt if needed.
- Divide the potato and quark mixture between two bowls. Spoon the buttery onions over the top, then scatter over the crisp pork belly. Finish with a dollop of sour cream and a generous sprinkle of finely snipped fresh chives.
Recipe notes
Tips
- For the best texture, steam-dry the potatoes briefly after draining so the mash stays fluffy rather than watery.
- Keep the onions on a medium-low heat and stir often; slow cooking brings out their sweetness without burning.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised quark cheese and sour cream.
Substitutions
- Replace Quark cheese with Ricotta for a milder, slightly looser texture.
- Replace Smoked pork belly with Bacon for a similar salty, smoky topping.
- Replace Unsalted butter with Ghee for a richer, nuttier onion topping.
Storage
- Refrigerate up to 2 days
- Store the potato and quark base, onions, and pork belly separately in airtight containers. Reheat the potato mixture and onions gently in a saucepan with a splash of water until piping hot, and re-crisp the pork belly in a dry frying pan for 1 to 2 minutes before serving; add sour cream and fresh chives at the end.
