Methi Malai Murg (Creamy Fenugreek Chicken)
Why this recipe works
- Layered aromatics: Whole spices, softened onion, ginger, garlic and ground spices build a rounded base before the chicken goes in.
- Smooth, rich gravy: Adding the cream at the end keeps the sauce mellow and velvety rather than heavy or over-reduced.
- Fenugreek finish: Crushing dried fenugreek leaves just before adding them releases their aroma and gives the curry its recognisable flavour.

Ingredient notes
- Dried fenugreek leaves: Kasuri methi has a concentrated, slightly bitter herbal aroma that defines the dish; crush it between your palms before stirring it in.
- Choosing the cream: Double cream gives the fullest texture, while single cream makes a lighter gravy but may need a little longer to thicken.
- Chicken thighs: Boneless, skinless thighs stay tender during simmering and suit the creamy sauce better than leaner cuts.
Common mistakes
- Letting the onions catch: Cook the onions gently until soft and lightly golden; if they start to stick, lower the heat and add a small splash of water.
- Boiling after adding cream: Keep the heat low once the cream is added. A gentle warm-through helps the sauce stay smooth.
- Rushing the simmer: Give the chicken enough time to cook through and become tender before finishing the curry with fenugreek and cream.
Make-ahead tips
- Make ahead: The curry can be cooked ahead and refrigerated once cool, making it useful for planned dinners or batch cooking.
- Reheat gently: Warm over low heat with a splash of water, stirring often, and avoid boiling so the creamy gravy stays smooth.
- Freezing: Freeze in a sealed container, defrost overnight in the fridge, then reheat slowly on the hob until piping hot.
Serving ideas
- With rice: Serve with plain basmati rice to keep the focus on the creamy fenugreek sauce.
- With bread: Naan, roti or paratha work well for scooping up the gravy.
- Fresh finish: A little fresh coriander or a final pinch of crushed fenugreek can add colour and aroma just before serving.

Ingredients
Instructions
- Finely slice the onion. Grate the ginger and crush the garlic.
- Heat the ghee in a dutch oven over medium heat. Add the cardamom pods and cinnamon stick and cook for 30 to 60 seconds until fragrant.
- Add the onion with a pinch of the salt and cook, stirring often, for 10 to 12 minutes until soft and lightly golden. If it starts to catch, lower the heat and add a splash of water.
- Stir in the ginger and garlic and cook for 1 to 2 minutes until the raw smell disappears. Add the ground coriander, ground cumin and ground turmeric and cook for 30 seconds, stirring constantly.
- Add the chicken and the remaining salt, then stir to coat in the spiced onion mixture. Cook for 5 to 6 minutes, turning the pieces, until the chicken is no longer pink on the outside.
- Pour in 250 ml water and bring to a gentle simmer. Cover and cook for 15 to 18 minutes, stirring once or twice, until the chicken is tender and cooked through.
- Crush the dried fenugreek leaves between your palms and stir them into the curry. Simmer uncovered for 3 to 5 minutes until the gravy lightly thickens.
- Lower the heat and stir in the double cream. Warm gently for 2 to 3 minutes without boiling, then remove the cinnamon stick and cardamom pods if you like before serving.
Recipe notes
Tips
- For the best aroma, crush the dried fenugreek leaves just before adding them so their oils release into the sauce.
- Keep the heat low after adding the double cream; a gentle warm-through prevents the sauce from splitting.
Substitutions
- Replace ghee with unsalted butter for a similar richness.
- Replace double cream with single cream for a lighter gravy, and simmer a few minutes longer to thicken.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob over low heat with a splash of water, stirring often, until piping hot; avoid boiling to keep the sauce smooth. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
