Zafrani Pulao (Saffron Rice with Nuts and Sultanas)
Why this recipe works
- Fragrant layers: Saffron, cardamom, cloves, cinnamon and bay leaves perfume the rice without overwhelming its delicate flavour.
- Contrasting texture: Fluffy basmati is finished with toasted nuts and plumped sultanas for crunch, chew and gentle sweetness.
- Separate grains: Rinsing, draining and resting the rice after cooking help keep the grains light rather than sticky.

Timing notes
- Let the rice steam off the heat: The covered resting time is part of the cooking process, allowing the grains to finish evenly and firm up before fluffing.
- Best served warm: Serve soon after fluffing so the nuts stay crisp and the saffron aroma remains clear.
Ingredient notes
- Use basmati rice: Basmati gives the pulao its long, separate grains and delicate aroma; shorter-grain rice will produce a softer, stickier result.
- Bloom the saffron: Steeping saffron before it goes into the pot helps release its colour and fragrance more evenly through the rice.
- Ghee adds depth: Ghee carries the spice aromas and gives the rice a rounded, nutty richness.
Texture tips
- Drain the rice well: Excess rinse water can throw off the cooking liquid balance, so let the rice drain thoroughly before adding it to the pot.
- Lift rather than stir: Use a gentle lifting motion when fluffing and folding in the nuts to avoid breaking the grains.
Serving ideas
- Serve with saucy dishes: Pair with curries, dals or vegetable stews where the fragrant rice can absorb the sauce.
- Add a cooling contrast: Plain yoghurt or raita balances the sweetness of the sultanas and the richness of the ghee.
- Finish with extra nuts: A final scattering of toasted nuts gives the dish a more festive look and extra crunch.

Ingredients
Instructions
- Rinse the basmati rice in several changes of cold water until the water runs mostly clear, then drain well. Put the saffron in a small bowl with 2 tbsp of the water and leave to steep while you prepare the rest.
- Thinly slice the onion. Lightly bruise the cardamom pods by pressing them with the side of a spoon so they crack.
- Melt 30 g of the ghee in a large pot over a medium heat. Add the onion and cook for 8 to 10 minutes, stirring often, until soft and lightly golden.
- Stir in the cardamom, cloves, cinnamon stick and bay leaves and cook for 30 to 60 seconds until fragrant. Add the drained rice and stir gently for 1 minute to coat the grains in the spiced ghee.
- Pour in the remaining water, then add the salt, sugar and the saffron with its soaking water. Bring to the boil, then immediately reduce to a low heat, cover tightly and simmer for 12 minutes until the water is absorbed and the rice is tender.
- Turn off the heat and leave the pot covered for 10 minutes to steam and finish cooking. Meanwhile, melt the remaining 15 g ghee in a small saucepan over a medium-low heat and toast the cashews and almonds for 2 to 3 minutes until pale golden, then stir in the sultanas for 30 seconds to plump.
- Remove the lid and gently fluff the rice with a wooden spoon, lifting rather than stirring to keep the grains separate. Discard the cinnamon stick and bay leaves, then fold through the toasted nuts and sultanas and serve warm.

Serving suggestions
This recipe pairs well with:
Tips
- For the best texture, drain the rice very well before it goes into the pot so the water ratio stays accurate.
- Keep the heat very low once covered; if the base starts to catch, place the pot on a heat diffuser or move it to a smaller ring.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the rice is served piping hot and cooled quickly before chilling any leftovers.
Substitutions
- Replace ghee with unsalted butter for a similar richness, though the flavour will be slightly less nutty.
- Replace sultana with golden-raisin for a similar sweetness and colour.
- Replace blanched almonds with pistachios for a more festive finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a saucepan with a splash of water over a low heat, covered, until piping hot; or microwave covered, stirring once halfway. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
