Fluffy Idli Bowl with Chutney

Soft idli with coconut chutney is a familiar South Indian breakfast combination, centred on warm steamed rice-and-lentil cakes served with a cool, spoonable accompaniment. In this bowl, the idli stay fluffy and gentle while the chutney brings fresh coconut richness, yoghurt tang, green chilli heat and a little ginger warmth. A quick tempering of popping mustard seeds and curry leaves gives the chutney its distinctive aroma and savoury edge, with lemon adding brightness at the end. It is a practical, comforting breakfast or light meal, best served straight away while the idli are warm and the tempering is fragrant.

Why this recipe works

  • Quick to assemble: Using cooked idli keeps the focus on warming, blending and tempering, so the bowl comes together quickly.
  • Creamy chutney: Fresh coconut and yoghurt blend into a smooth sauce that clings well to the soft idli.
  • Aromatic finish: Mustard seeds and curry leaves are briefly bloomed in hot oil, adding fragrance and savoury contrast.

Adjust the heat

  • For a milder chutney: Remove the seeds from the green chilli before blending, or use a smaller piece of chilli.
  • For more heat: Blend in extra green chilli gradually, tasting as you go so the heat does not overpower the coconut.

Ingredient notes

  • Use white coconut flesh: Fresh white coconut gives the chutney a clean flavour and smooth texture; avoid the brown skin for a paler, finer result.
  • Balance the lemon: Add citrus to taste, as yoghurt and coconut vary in richness and tang.

Make-ahead tips

  • Make the chutney ahead: The chutney can be kept covered in the fridge for up to 2 days; stir well before serving.
  • Steam idli just before serving: Idli are best served warm and soft, so re-steam them shortly before assembling the bowls.

Authenticity notes

  • Tempered chutney: The hot mustard seed and curry leaf tempering is a classic way to add aroma and contrast to coconut chutney.
  • Classic pairing: Idli and coconut chutney are a familiar South Indian breakfast combination, often served warm with a spoonable chutney alongside.

  1. Put the fresh coconut, yogurt, green chilli, ginger, fine sea salt and the juice of the lemon into a blender. Add 60 ml water and blend until smooth, scraping down as needed. Taste and add a pinch more salt if needed, then tip into a bowl.
  2. Set up a steamer over simmering water and steam the idli for 4 to 6 minutes until warmed through and soft. Keep them covered so they stay fluffy. Turn off the heat.
  3. Heat the vegetable oil in a small saucepan over medium heat. Add the mustard seeds and cook until they start to pop, then add the curry leaves and cook for 20 to 30 seconds until fragrant. Pour the hot tempering over the chutney and stir gently.
  4. Divide the warm idli between two bowls. Spoon the chutney alongside or over the top. Serve straight away while everything is warm and aromatic.

Recipe notes

Tips

  • For a lighter chutney, blend in a little more water until it is spoonable but still thick enough to cling to the idli.
  • Keep the tempering moving and take it off the heat as soon as the mustard seeds pop so it does not turn bitter.
  • If serving to young children or anyone sensitive to heat, remove the seeds from the green chilli before blending.

Substitutions

  • Replace yogurt with greek-yogurt for a thicker, richer chutney.
  • Replace lemon with lime for a slightly sharper citrus note.

Storage

  • Refrigerate up to 2 days
  • Store the chutney in a sealed container in the fridge. Reheat the idli by steaming for 3 to 4 minutes until piping hot; stir the chutney well before serving.
