Sushi Burrito with Salmon, Avocado and Cucumber

Part sushi roll, part hand-held wrap, a sushi burrito takes the familiar flavours of maki and makes them more substantial for lunch or an informal meal. Seasoned sushi rice is spread over nori, then filled with sashimi-grade salmon, cucumber and avocado for a clean mix of richness, crunch and freshness. A soy mayonnaise dressing adds savoury creaminess without overwhelming the fish, while sesame seeds bring a light nutty finish. Best served soon after rolling, it is easiest to eat halved, with the nori still firm and the rice cooled to room temperature.

Why this recipe works

  • Clean texture contrast: Soft seasoned rice, creamy avocado, crisp cucumber and tender salmon give the wrap clear layers without needing extra fillings.
  • Balanced rice: Rice vinegar, sugar and salt season the rice in the classic sushi style, adding gentle tang and sweetness to balance the rich salmon and mayonnaise.
  • Efficient assembly: Most of the time is spent cooking and cooling the rice; once the fillings are sliced, the burritos come together quickly.

Ingredient notes

  • Use suitable salmon: Choose sashimi-grade salmon from a reliable supplier and keep it chilled until slicing and assembly.
  • Choose firm avocado: A ripe but firm avocado slices cleanly and holds its shape better inside the roll.
  • Cut fillings into strips: Long, even pieces of salmon and cucumber make the burrito easier to roll and slice neatly.

Timing notes

  • Cool the rice before rolling: Let the seasoned rice reach room temperature before it touches the nori; warm rice can make the sheet soften too quickly.
  • Serve soon after assembly: The texture is best straight away, while the nori still has some bite and the avocado is freshly cut.

Ingredient swaps

  • Use smoked salmon: Smoked salmon is a ready-to-eat alternative with a saltier, more pronounced flavour.
  • Use cooked salmon when needed: Cooked salmon is the safer choice for pregnant people, young children, older adults or anyone immunocompromised.

Make-ahead tips

  • Prep components separately: If preparing ahead, keep the rice, fish, vegetables, dressing and nori separate, then roll just before serving.
  • Best on the day: Once rolled, the nori softens and the avocado can darken, so this is not a recipe to make far in advance.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan, cover with fresh water by about 2 cm, then bring to the boil. Cover, reduce to a very low heat and cook for 12 minutes, then take off the heat and leave covered for 10 minutes.
  2. In a mixing bowl, stir together the rice vinegar, caster sugar and fine sea salt until dissolved. Tip the hot rice into a wide bowl and gently fold in the vinegar mixture. Spread the rice out slightly and leave to cool to room temperature.
  3. While the rice cools, slice the salmon into long strips. Cut the cucumber into thin batons and slice the avocado. In a small bowl, mix the soy sauce and mayonnaise to make a creamy dressing.
  4. Lay a nori sheet on the board with the shiny side down. Spread half the rice over the nori, leaving a 2 cm border at the top edge, then sprinkle over half the roasted sesame seeds. Arrange half the salmon, cucumber and avocado in a line across the lower third, then drizzle with half the dressing.
  5. Roll up tightly like a burrito: fold the bottom up over the filling, fold in the sides, then roll to seal, using a dab of dressing on the edge if needed. Repeat with the second nori sheet and remaining ingredients. Slice each burrito in half with a sharp knife and serve straight away.

Recipe notes

Tips

  • For best texture, cool the rice to room temperature before rolling so the nori stays crisp rather than turning chewy.
  • Use sashimi-grade salmon and keep it chilled until the moment you slice and assemble; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use cooked salmon instead.

Substitutions

  • Replace the salmon fillet with smoked salmon for a ready-to-eat option and a smokier flavour.
  • Replace the mayonnaise with avocado oil mayonnaise for a slightly lighter, cleaner finish.

Storage

  • Refrigerate up to 1 days
  • Best eaten straight away. If needed, wrap tightly and refrigerate for up to 1 day; the nori will soften and the avocado may darken. Slice just before serving.
