Paneer Burrito-Style Fusion Wrap
Why this recipe works
- Layered flavour: Cumin and garam masala bring warmth to the paneer, while mint yoghurt, coriander and lime keep the wrap fresh.
- Good texture contrast: Golden paneer, soft rice, crisp salad and a toasted tortilla give each bite structure rather than softness alone.
- Practical for lunch: The fillings can be prepared separately, then assembled and toasted when ready to serve.

Make-ahead tips
- Store fillings separately: Keep the rice, paneer, salad and mint yoghurt in separate containers so the tortilla does not become soggy.
- Assemble just before eating: Warm the rice and paneer first, then add the cold salad and sauce before rolling and toasting.
Texture tips
- Brown the paneer properly: Let the paneer sit briefly in the hot pan before turning so it can develop golden edges.
- Drain wet fillings: If the cucumber salad releases a lot of liquid, leave the excess behind before adding it to the wrap.
Ingredient notes
- Use firm paneer: Firm paneer holds its shape better during frying and rolling, giving the wrap a more substantial bite.
- Adjust the lime: Add lime gradually to the yoghurt and salad so the wrap tastes bright without becoming too sharp.
Common mistakes
- Avoid crowding the paneer: If the pan is too full, the paneer will steam rather than brown. Cook in space so the cubes colour evenly.
- Do not overfill the tortilla: Too much filling makes the wrap harder to roll and more likely to split during toasting.

Instructions
- Rinse the basmati rice until the water runs mostly clear. Cook it in a saucepan of boiling salted water for 10 to 12 minutes until tender, then drain well and cover to keep warm. Set aside while you prepare the fillings.
- Make the mint yoghurt sauce: finely chop the mint and stir it into the greek yogurt with a good squeeze of lime juice, a pinch of fine sea salt, and a little black pepper. Taste and add more lime if you want it sharper. Set aside.
- Make the quick salad: finely slice the cucumber and red onion, then toss with most of the fresh coriander, a squeeze of lime juice, and a pinch of fine sea salt. Let it sit while you cook the paneer so it lightly softens and releases a little juice. Keep the remaining coriander for finishing.
- Cut the paneer into bite-sized cubes. Heat the sunflower oil in a large frying pan over medium-high heat, then add the paneer and cook for 4 to 6 minutes, turning, until golden on most sides. Sprinkle over the ground cumin, garam masala, a pinch of fine sea salt, and black pepper, then toss for 30 seconds until fragrant.
- Warm the flour tortillas briefly in a dry frying pan so they are pliable. Divide the rice between the tortillas, then top with the spiced paneer and the cucumber and red onion salad. Spoon over some mint yoghurt sauce and scatter over the reserved coriander, then add a final squeeze of lime.
- Fold each wrap like a burrito: fold in the sides, then roll up tightly from the bottom. Toast seam-side down in the frying pan over medium heat for 1 to 2 minutes per side until lightly crisp and warmed through. Serve straight away with any extra mint yoghurt sauce on the side.
Recipe notes
Tips
- For a neater burrito, keep the fillings in a tight line down the centre and avoid overfilling before rolling.
- If you like a sharper salad, add an extra squeeze of lime just before assembling so it stays bright and fresh.
- If serving to anyone vulnerable to foodborne illness, use pasteurised greek yogurt and keep the wraps out of the temperature danger zone by assembling and toasting just before eating.
Substitutions
- Replace greek yogurt with yogurt for a looser, lighter sauce.
- Replace sunflower oil with olive oil for a fruitier flavour when frying the paneer.
- Replace fresh mint with fresh coriander for a more herb-forward sauce.
Storage
- Refrigerate up to 2 days
- Store the rice, paneer, salad, and mint yoghurt sauce in separate airtight containers in the fridge. Reheat the rice and paneer in a frying pan with a splash of water until piping hot, then assemble fresh; the salad is best added cold.
